KIT you will need an air fryer
Ingredients for Air Fryer Fried Rice
2 packets of microwave rice
2 medium sized eggs
1 carrot
1 courgette
A small yellow pepper
1 small green pepper
1 small red onion
Pak choy
1 teaspoon of garlic powder
1 teaspoon of onion powder
2 tablespoons of soya sauce (saving extra to serve)
4 tablespoons of teriyaki sauce (Saving extra to serve)
Method
So first remove the crisper trays from your air fryer. Then place the eggs into a silicone mould or directly into the air fryer and cook for 8 to 10 minutes on 180°C. Depending on how soft you like your yolk.
While the Eggs cook, prepare the veggies. So using a peeler with serrated edges or a sharp knife, thinly slice the carrots & courgettes into ribbons or matchsticks. Then slice the peppers into thin strips and the onions into fine slices. Separate the pak choi leaves from the stems, discarding any tough parts if necessary. Then wash them thoroughly under cold running water to remove any dirt or grit. Set aside.
So once the eggs have cooked, carefully remove them from the air fryer and cool them in a bowl of cold water.
Place the prepared vegetables (except the Pak Choy leaves) into the air fryer basket. Lightly spray with olive oil and add teriyaki sauce, garlic powder, and onion powder to season. Toss the vegetables to ensure an even coating. Cook at 180°C for 5 to 7 minutes, stirring halfway through for even cooking.
Then add your cooked rice and Pak Choy leaves to the air fryer. Stir everything together and season with salt and pepper (or additional teriyaki sauce if preferred). Cook for a final 3 to 5 minutes, or until the rice is piping hot and the vegetables are slightly crispy at the edges.
Once the eggs have cooled slightly, gently peel off the shells and slice them in half. Spoon the rice and vegetable mixture onto serving plates. Arrange the halved eggs on the side. Drizzle with soy sauce and sprinkle over some crushed nuts for added crunch. If you like spice, drizzle with chilli oil before serving.
Tips for Air Fryer Fried Rice
1. Use cold, day-old rice
Freshly cooked rice is too moist and sticky. Cold, leftover rice from the fridge gives you the best texture – fluffy and separate, not mushy.
2. Break up the rice first
Use your hands or a fork to gently separate clumps of rice before cooking. This helps everything cook evenly and crisp up nicely.
3. Preheat your air fryer
Preheat to 190°C (375°F) for a few minutes so the rice starts crisping straight away.
4. Use a lined or shallow dish
Line your air fryer basket with foil or use a shallow air fryer-safe dish to stop small grains from falling through the basket and to keep things easy to stir.
5. Don’t skip the oil
Toss the rice with a small amount of neutral oil or sesame oil. This helps with flavour and crisping.
6. Cook scrambled egg separately or stir it in halfway
You can pre-scramble the egg in a pan, or crack it over the rice halfway through cooking, stir it in, and continue air frying until it’s cooked through.
7. Add veg or protein for a full meal
Peas, sweetcorn, diced carrots, or cooked chicken/prawns work brilliantly. Just make sure anything raw is pre-cooked or sliced small enough to cook quickly.
8. Stir halfway through cooking
Mix the rice around at the halfway point to help it crisp up evenly and avoid burning at the edges.
9. Finish with soy sauce or spring onions
Add soy sauce, a drizzle of sesame oil, or chopped spring onions just before serving for extra flavour.
