Crispy halloumi and sweet potatoes with roasted veggies with a spicy honey dressing makes the perfect healthy lunch! It is really easy to make, tastes so delicious, and all made in the air fryer in minutes! This is a tasty low calorie yet hearty vegetarian dish that pairs crispy air fryer halloumi and sweet potatoes. All these ingredients cook so beautifully in the air fryer and is ready in just a few minutes.
So many people ask me how to cook halloumi in the air fryer and it is really simple. Learn how to make this deliciously healthy sweet and savoury air fryer recipe in less than 15 minutes.

SERVES 2 people
KIT you will need an air fryer and a large mixing bowl.
Ingredients for air fryer Halloumi
1 Medium sized sweet potato, peeled and chopped
125g of halloumi cheese, sliced
180g of fresh Asparagus
1 Red pepper, de-seeded and thinly sliced
A Handful of fresh spinach leaves
1 teaspoon of Paprika
Olive oil spray
To serve:
2 tablespoon of Runny honey
1 teaspoon of dried Chilli flakes
Method
So start by peeling and chopping your sweet potatoes into small cubes and add to a bowl. Then spray with oil and toss until all are coated in oil. Next, sprinkle over your paprika, making sure each one is fully covered in the seasoning. Then set aside.
Next, slice your halloumi cheese lengthways into strips and spray each side with oil. Add the halloumi and sweet potatoes directly on to your air fryer basket, leaving the crisper trays in. Set the temperature to 190c and cook for 5 to 6 minutes, or until your potatoes are beginning to crisp and your halloumi is starting to brown slightly on the edges.
While they are cooking, de-seed your red pepper and slice length ways. And after around five minutes of the potatoes and halloumi cooking, add your peppers to the air fryer. Turn the halloumi slices over and shake the potatoes, to ensure an even cook. And cook for a further 3 to 4 minutes.
Then add your asparagus to the air fryer basket and cook for a further 3 to 4 minutes or until the vegetables are cooked and the potatoes and halloumi are crispy and a lovely golden brown colour.
Whilst the vegetable are finishing cooking, mix your runny honey and dried chilli flakes together in a bowl. Carefully remove the halloumi and vegetables from the air fryer basket and serve on a bed of fresh spinach leaves.
Pour the honey and chilli dressing over the top and serve immediately whilst still warm. Enjoy this tasty and healthy lunch.
