Ingredients for air fryer roast potatoes
Potatoes (Maris Piper and Yukon Gold are the best varieties)

Method
First, I thinly sliced the potatoes using a mandoline for even thickness, though a sharp knife works just fine. I then placed the slices into a bowl of cold water and let them soak for about an hour. This step is key to drawing out excess starch, which helps the slices crisp up nicely and prevents them from sticking together during cooking.
After an hour, I drained the potatoes and patted them dry thoroughly using a clean tea towel or some kitchen paper. If you remove as much moisture as possible, it ensures a crispier finish. I lightly sprayed the slices with olive oil to help them crisp up and brown evenly.
Next, I placed the potato slices into the air fryer basket, leaving the crisper plate in. Making sure they were in a single layer and not overlapping too much. I cooked them at 200°C for around 10 minutes. Giving the basket a good shake every few minutes to ensure even cooking. So depending on the thickness of your slices, you may need to adjust the cooking time slightly.
Then once golden and crispy, I served the air fried potato slices straight away. They’re delicious on their own with a sprinkle of sea salt, but they also make a perfect side dish.
Pair these crispy potatoes with grilled meats like steak, chicken, or salmon, or serve them alongside a fresh salad or eggs for a satisfying breakfast. You can even get creative and set up a potato bar with toppings. Like cheese, bacon bits, sour cream, and chives for a fun twist. Tips for Air Fryer Roast Potatoes
1. Choose the right potato
Varieties like Maris Piper, King Edward, or Desiree are ideal for roasting. These starchy varieties give you that fluffy centre and crisp exterior.
2. Peel and chop evenly
Peel and cut the potatoes into even-sized chunks (about 4 or 5cm) to ensure they cook at the same rate.
3. Parboil first
Boil the potatoes for about 7 to 8 minutes until just tender. This helps create a soft inside and gives the surface a chance to fluff up for crispiness.
4. Rough them up
After draining, shake the potatoes gently in the colander to rough up the edges. This creates more surface area for crisping.
5. Use hot oil
Add a spoonful of hot oil (vegetable, sunflower, or goose fat) and coat the potatoes evenly. Heating the oil before tossing helps them crisp up faster in the air fryer.
6. Season generously
Salt, pepper, garlic granules, rosemary, thyme, or paprika all add amazing flavour to your roast potatoes. Toss in your favourites before cooking them.
7. Don’t overcrowd the basket
Cook in batches if needed. Leave space between the potatoes to allow air to circulate and makes for even crisping. Also leave in the crisper plates in the bottom of the air fryer basket to allow the hot air to move under the potatoes.
8. Shake halfway
Give the basket a good shake halfway through the cook time to brown all sides evenly.
9. Cook at a high temperature
Set the air fryer to around 195°C (383°F) and cook for 20 to 25 minutes, depending on size, shaking at least once or twice during the cooking helps to crisp them all over.
