Ingredients for air fryer hasselback potatoes

3 medium potatoes. washed and sliced (russet potatoes work really well)

Grated parmesan cheese (the amount will depend on the size of the potatoes and the number of cuts)

Fresh parsley, finely chopped

Light olive oil spray

Salt and pepper

Method

So first I washed the potatoes thoroughly as the skins are staying on. Then I cut slits into my potatoes a few millimetres apart but be careful not to cut all the way through them. Try to leave around half an inch or a centimetre un cut at the bottom of each potato.

Next I sprayed the potatoes with a light vegetable oil and then seasoned them with plenty of salt and pepper. Then I put the potatoes directly into my air fryer drawer leaving the crisper plates in. Try to space the potatoes out evenly to ensure the hot air can curculate properly. I cooked my potatoes low and slow in my air fryer on 160C for around 40 minutes. Keep checking on them regularly throughout and spray on a little more olive oil half way through. This will help if you like your potato skins to be extra crispy.

Then carefully remove the hot potatoes from the air fryer. I prefer to sprinkle over some fresh grated parmesan cheese and a little fresh chopped parsley.

So I like to serve my baked hasselback potatoes with a red onion balsamic gravy.
