Craving a Nando’s peri peri chicken? Well you’re not alone as we all absolutely love Nando’s chicken in our house. Nando’s is famous around the World for it’s unique and flavoursome grilled chicken. This is a very quick and easy recipe to make your favourite Nando’s style peri peri (or piri piri as some call it) chicken thighs at home. And using your trusty air fryer will save you energy and money. And this is so much cheaper and healthier than the dish that you get from a restaurant. So learn how to make this delicious crispy and juicy fake-away air fryer Nando’s inspired chicken in less than 20 minutes including preparation time.
I use chicken thighs in this recipe as they are bit fattier that other cuts of chicken. But they taste so much better that skinless chicken breasts in my opinion.
PREP 5 minutes
COOK 16 to 18 minutes
SERVES 2 people
KIT you will need an air fryer, a large mixing bowl, kitchen roll and tin foil.
Ingredients for air fryer Nando’s Chicken
X4 Bone in chicken thighs
X1 packet of Fajita seasoning mix (or make your own with chilli flakes, paprika, garlic powder, onion powder and oregano)
X4 small corn on the cobs
Olive oil spray
To serve:
A handful of fresh coriander, chopped
A fresh chilli, thinly sliced
A packet of Microwave rice
Method
So start by patting dry your chicken pieces and adding to a large bowl. Spray with your oil and sprinkle over your fajita mix (saving a tablespoon to season the corn), mix well making sure the chicken is completely coated in the mixture.
Then line your air fryer basket with tin foil and add in your seasoned chicken pieces. Cook on 190c for around 10 minutes, with the skin side down.
So while your chicken is cooking, add your sweet corn to some tin foil, spray lightly with olive oil and scatter the rest of the seasoning mixture over, making sure each piece is well covered. Make the foil into a little parcel and after 5 minutes of the chicken cooking, add into your air fryer tray and leave for the remainder of the total cooking time of the chicken.
Then after the chicken has been cooking for 10 minutes open the foil and turn each piece breast side up, leave the foil open and cook for a further 6 to 8 minutes, depending on how thick each piece is you may need a longer cooking time. So cook until the juices run clear, and you have a perfectly crispy skin.
Finally, serve with a sprinkle of coriander and some fresh red chillies with a side of microwave rice.
