Air Fryer Brownies

MAKES 12 brownies

KIT you will need a microwave (or hob), an air fryer, two mixing bowls, baking paper and a 10 x 8 inch baking tray

Ingredients for air fryer brownies

125g of dark chocolate, melted

125 of butter, melted

175g of caster sugar

2 large eggs

1 teaspoon of baking powder

80g of plain flour

25g of cocoa powder

Pinch of salt

25g of crushed pecans

To serve (optional):

Vanilla ice cream, double cream or warm custard

Method

First, prepare your baking tray by lining it with a sheet of baking paper, making sure it fits snugly into the corners. Set the tray aside for now. Take a heatproof mixing bowl and add in your butter. Break your dark chocolate into small chunks and add it to the bowl with the butter. To melt them together, place the bowl in the microwave and heat on a medium setting in 40-second bursts, stirring in between each burst until the mixture becomes smooth and melted. If you prefer, you can melt the butter and chocolate in a saucepan over a low heat on the hob – just be sure to stir constantly so it doesn’t burn.

In a separate large mixing bowl, crack in your eggs and add the caster sugar, cocoa powder, plain flour, baking powder, and a pinch of salt. Pour in your melted chocolate and butter mixture, then fold everything together gently using a spatula or wooden spoon. Be careful not to overmix – just enough to combine all the ingredients into a thick, glossy batter. Once that’s done, stir in your crushed pecans, folding them evenly throughout the mix.

Pour the brownie batter into your baking tray and smooth over the surface with the back of a spoon or spatula so it’s even. Place the tray into your air-fryer. Keeping the crisper plate in if it’s removable. Set the temperature to 160°C and cook for around 30 minutes. Or until the brownies are set in the middle and a skewer comes out mostly clean.

Carefully remove the tray from the air fryer and allow the brownies to cool completely before cutting them into about twelve neat squares.

So I love serving these air fryer brownies warm with vanilla ice cream, double cream, or warm custard.

Tips for Air Fryer Brownies

1. Use the right dish
Choose a heatproof dish (ceramic, metal, or silicone) that fits your air fryer basket with a little room around the sides for air circulation. Too small, and the brownies won’t cook evenly; too large, and they may dry out.

2. Don’t overmix the batter
For dense, fudgy brownies, mix just until the ingredients are combined. Overmixing can incorporate too much air, leading to a cakier texture.

3. Line your dish for easy removal
Use parchment paper or lightly grease your baking dish to make removing the brownies simple and mess-free once baked.

4. Adjust cooking time based on thickness
Thicker brownie batter will take longer to cook so start with 160°C (320°F) for 14–16 minutes. A skewer should come out with a few moist crumbs (not wet batter) when they’re done.

5. Check early and often
Air fryers vary, so check your brownies a few minutes early. If the top looks set but the middle jiggles slightly, they’ll finish setting as they cool – perfect for gooey brownies.

6. Let them cool before slicing
Resist the urge to cut into them straight away! Let the brownies cool in the dish for at least 10–15 minutes to set properly. This also makes for neater slices.

7. Add extras if you like
Stir in chocolate chunks, nuts, or a swirl of peanut butter or caramel before baking for extra indulgence.
