Ingredients for Air Fryer Strawberry Tarts

270g pack of filo pastry sheets

4 tablespoons of Biscoff spread

200g strawberries, hulled and quartered

Icing sugar, for dusting

Method

To begin making these air fryer strawberry tarts, start by unrolling your filo pastry. Gently tear each sheet into six to eight even squares. Don’t worry about making them perfectly neat. As the beauty of this recipe lies in its rustic charm. These pieces will be layered up in your silicone moulds, creating a delicate, crispy texture.

Once your filo pastry is prepared, it’s time to create the tart bases. Start layering the filo squares into each silicone case, arranging them in a way that creates a “nest-like” shape. I like to layer three to four sheets of pastry in each case. Ensuring they overlap slightly for a more textured, crunchy finish. The layers will give the pastry a delightful flakiness once cooked.

Next, spoon a teaspoon of Biscoff spread into the base of each filo pastry cup. The sweet, spiced flavour of the Biscoff spread adds a rich, indulgent touch to the tarts that pairs perfectly with the fresh strawberries. Once filled, carefully transfer the filo cups to your air-fryer and set it to cook at 180°C for 10 minutes. During cooking, check halfway through as air fryer temperatures and cooking times can vary depending on the model. You want the filo to be crisp and golden, so keep an eye on them to prevent burning.

Once the pastry cases are perfectly baked, carefully remove them from the air fryer basket and allow them to cool for a few minutes. Then, fill each tart with chopped fresh strawberries, which will add a burst of juicy sweetness. Dust the tops with icing sugar for a finishing touch of sweetness and elegance.

So for the final touch, serve your air fryer strawberry tarts with a generous dollop of double cream, adding a creamy contrast to the crisp pastry and tangy strawberries.

Tips for Air Fryer Strawberry Tarts

1 Use pre-made pastry for convenience
Ready-rolled shortcrust or puff pastry saves time and delivers a crisp, golden base. Cut it into rounds or rectangles to fit your tart tins or ramekins.

2. Preheat your air fryer
Set your air fryer to 180°C (356°F) for 2 to 3 minutes before baking. A preheated basket will help the pastry puff up nicely and cook evenly.

3. Prick the base
Use a fork to poke small holes in the base of the pastry. This prevents air bubbles and keeps the base from puffing up too much.

4. Blind bake if using juicy fillings
Air fry the tart shells for 4 to 5 minutes before adding the filling to avoid a soggy bottom. Use a piece of parchment paper and a few dried beans or ceramic weights if needed.

5. Use fresh, ripe strawberries
Choose bright red, firm strawberries for the best flavour and appearance. Halve or slice them depending on your tart size.

6. Add a creamy base
For a classic touch, spread a layer of sweetened cream cheese, whipped cream, or vanilla custard on the cooled tart base before topping with fruit.

7. Don’t overload the tarts
Keep the strawberry layer neat and not too thick. This ensures even cooking and a better bite.

8. Glaze for shine
Brush the strawberries with a little warmed apricot jam or honey after baking to give your tarts a beautiful glossy finish.

9. Cool slightly before serving
Let the tarts rest for 5 to 10 minutes after baking. This helps the filling set and makes them easier to serve.

10. Serve with extras
Add a dusting of icing sugar, a dollop of whipped cream, or a scoop of vanilla ice cream for a delightful dessert!
