KIT you will need an air fryer, a silicone mould or baking paper.
Ingredients for Air Fryer Biscuits
150g of salted butter, softened
80g of light brown muscovado sugar
80g of granulated sugar
1 large egg
225g of plain flour
1/2 a teaspoon of bicarbonate of soda (baking soda)
200g of plain chocolate chips or chunks
Method
Start by making your cookie dough. In a large mixing bowl, combine softened butter with soft muscovado sugar and granulated sugar. Cream them together until the mixture is smooth and fluffy – this gives your cookies that perfect chewy texture. Crack in an egg and mix until fully incorporated. Then add plain flour and a pinch of bicarbonate of soda, mixing everything together to form a firm but pliable dough.
Once your dough is formed, it is time for the best part – the chocolate! Add in a generous handful of chocolate chips or roughly chopped chocolate chunks. Stir or beat again until the chocolate is evenly distributed throughout the dough.
Using your hands, take small portions of the dough and roll them into balls about the size of a golf ball. If you don’t want to bake the whole batch at once, place some of the cookie dough balls on a tray and pop them into the freezer – perfect for future cravings!
For the cookies you are baking now, line the air fryer drawer with greaseproof paper and space the dough balls out, leaving enough room for them to spread as they bake.
Set your air fryer to 180°C and cook the cookies for around 12 minutes, or until the tops are golden and they feel slightly firm to the touch.

3. Don’t Overcrowd
Place small balls of cookie dough in the air fryer basket with enough space between them (about 2 or 3cm apart). Cook in batches for the best results.
4. Shape Evenly
Roll dough into uniform mini balls so they bake evenly. A teaspoon measure works well for consistent sizing.
5. Flatten Slightly (Optional)
If you prefer a flatter cookie, press each dough ball gently with your fingertips before cooking. For chunkier cookies, leave them rounded.
6. Set the Right Temperature
Cook at 160°C (320°F) for 6 to 8 minutes. Mini cookies cook fast, so keep an eye on them to avoid over-baking.
7. Check at 5 Minutes
Since all air fryers vary slightly, check your cookies at the 5-minute mark. They should be golden on the edges but still soft in the centre. They will firm up as they cool.
