Air Fryer Flapjacks

These easy air fryer flapjacks are the perfect combination of soft, chewy, and delicious, and they’re incredibly quick and simple to make with the help of your trusty air fryer. Air fryers are ideal for making flapjacks because they cook the mixture evenly, giving you that golden, slightly crispy crust on the outside while keeping the inside wonderfully soft and chewy. This method not only saves you time but also eliminates the need for traditional oven baking, making it a convenient option for busy days when you want a tasty treat fast.

What makes these flapjacks even better is how healthy and nutritious they are. Made with just four simple staple ingredients that you likely already have in your pantry – golden syrup, oats, butter, and sugar – these flapjacks are a wholesome snack or treat. The oats provide a good source of fibre, while the golden syrup adds just the right amount of sweetness. Making them both filling and satisfying. They are perfect for an energy-boosting snack at any time of the day. Whether you need a pick-me-up during work or a little extra fuel before a workout.

Another great thing about these air fryer flapjacks is their storage ability. After baking, simply store them in an airtight container, and they’ll stay fresh for up to a week. MAKES 12 flapjacks

KIT you will need an air fryer, mixing bowl, a baking tray, a spatula and baking parchment.

Ingredients for Air Fryer Flapjacks

250g of porridge oats

85g of light brown sugar

30g of pumpkin seeds (optional)

30g of sultanas (optional)

150g of golden syrup

4 tablespoons of peanut butter

Method

To begin making these delicious air fryer flapjacks, start by measuring out your ingredients. Add 250g of porridge oats, 85g of light brown sugar, 30g of pumpkin seeds, 30g of sultanas, 150g of golden syrup, and 4 tablespoons of peanut butter into a large mixing bowl. Using a spatula, mix everything together thoroughly until all the ingredients are well combined and coated with the syrup and peanut butter. This mixture should be sticky and evenly textured, with the oats and seeds nicely distributed throughout.

Next, prepare your baking tray by lining it with baking parchment. My tray measures approximately 30 cm by 20 cm, which fits perfectly into my single drawer air fryer. However, before you get started, it is a good idea to double check that your tray will fit comfortably inside your air fryer drawer. Once you are sure, transfer the flapjack mixture into the lined tray and press it down firmly and evenly using your spatula. This will help it bake evenly and hold its shape once cooled.

Cover the tray tightly with tin foil and place it into the air fryer drawer. Keep the crisper plate inside the air fryer basket. As this will help circulate the hot air more effectively for even cooking. Set the air fryer temperature to 180°C and cook the flapjacks for about 10 minutes. After that, carefully remove the foil and return the tray to the air fryer for an additional 3 minutes. This will help brown the top and give it a slight crunch.

Once done, carefully remove the tray and let the flapjacks cool completely. Finally, slice them into 12 equal sized squares. These sweet, chewy, tasty treats are just perfect with a hot cup of tea or coffee – enjoy!

Tips for Air Fryer Flapjacks

1. Use the Right Oats
Go for rolled oats (not instant). They hold their texture and give you that satisfying chewiness classic flapjacks are known for.

2. Melt the Wet Ingredients First
Melt butter, golden syrup (or honey), and sugar in a saucepan or microwave before mixing with oats. This ensures even coating and helps everything bind properly.

3. Add Extras Thoughtfully
If adding extras (like dried fruit, nuts, chocolate chips, or seeds), fold them in after mixing the wet and dry base so they distribute evenly.

4. Use a Lined or Silicone Baking Dish
Line a small dish or tin that fits your air fryer basket with parchment paper or use a silicone pan. This prevents sticking and makes it easier to lift the flapjacks out cleanly.

5. Flatten Evenly
Press the mixture down firmly and evenly into the tin. A flat surface ensures even cooking and avoids crumbly edges.

6. Air Fry at a Moderate Temp
Cook at 160°C (320°F) for 10 to 15 minutes, depending on thickness. The edges should look golden, and the centre just set (it will firm up as it cools).

7. Check Early
Start checking around 10 minutes as air fryers can vary, and oats can burn quickly. Look for a golden top with slightly darker edges.

8. Cool Completely Before Slicing
Let them cool in the pan for at least 30 minutes (or chill for a quicker set). Cutting too soon leads to crumbling.

9. Sweetness & Binding
For a chewier texture, use brown sugar or demerara as they add moisture and depth. Golden syrup is traditional, but you can sub with honey or maple syrup if needed.

10. Store Right
Store cooled flapjacks in an airtight container. They keep well for 3 to 5 days and freeze beautifully.
