KIT you will need an air fryer and oven proof dish

Ingredients for air fryer weekend brunch

1 medium potato, peeled and finely sliced into discs

1 teaspoon of English mustard powder

4 tablespoons of milk

100g of fresh spinach, washed

130g of chorizo, diced

80g of cheddar cheese, grated

2 eggs

Olive oil, for spraying

Sea salt and freshly ground black pepper

Method

If you are looking for a hearty, flavour-packed brunch that comes together effortlessly, this air fryer breakfast bake is your new weekend favourite. It is layered with crispy potatoes, smoky chorizo, gooey cheese, and perfectly cooked eggs. And all made in one dish using your air fryer.

Start by lightly spraying an ovenproof dish with olive oil to prevent sticking. Thinly slice a potato into discs and arrange them in a single layer across the base of the dish. Sprinkle over a pinch of mustard powder. As this will add a subtle warmth that pairs beautifully with the other flavours. Next, pour in a splash of milk to help the potatoes cook and soften as the dish bakes.

Layer a generous handful of fresh spinach over the potatoes, spreading it out evenly. Then scatter over chopped chorizo, which brings a lovely smoky richness as it cooks. Top everything with a handful of grated Cheddar cheese, making sure to cover the surface for that irresistible cheesy finish.

Carefully crack two fresh eggs over the top, spacing them out so that they stay intact. Then season generously with salt and freshly ground black pepper.

Then place the dish into your air fryer basket and cook at 180°C (356°F) for around 10 to 15 minutes. Check every 5 minutes, as air fryer models can vary. You are looking for bubbling cheese, set egg whites, and a yolk cooked to your liking.

Tips for Air Fryer Weekend Brunch

Here and my top tips for making a delicious all-in-one weekend brunch using your trusty air fryer.

1. Plan your portions
Choose smaller portions of your favourite brunch items (sausages, hash browns, mushrooms, tomatoes, etc.) so they all fit in the air fryer basket without overcrowding.

2. Use foil dividers or ramekins
Separate ingredients like beans or eggs using foil “trays” or ramekins to prevent flavours from mixing and to help with different cook times.

3. Preheat your air fryer
Set it to 180°C (356°F) for 2 or 3 minutes. Preheating helps crisp up hash browns, sausages, and other items more effectively.

4. Stagger the cooking
Start with items that take the longest (like sausages or potatoes) then add faster-cooking ingredients (e.g., tomatoes, mushrooms) partway through.

5. Use oil spray wisely
A light spray of olive oil on mushrooms, tomatoes, or bread helps them brown nicely without becoming greasy.

6. Keep eggs contained
Crack eggs into silicone muffin cups or ramekins for neat, perfectly cooked air fryer eggs. Add in the last 5 or 6 minutes of cooking.

7. Toast your bread
Add slices of bread, crumpets, or English muffins in the last 3 to 4 minutes for a crispy, golden finish.

8. Flip or shake ingredients halfway
Give everything a shake or flip to ensure even browning and cooking on all sides, especially sausages and hash browns.

9. Check for doneness
Use a thermometer if needed as the sausages should hit 75°C (167°F). Veg should be soft and golden, eggs just set.

10. Serve hot and fresh
Plate up your brunch straight away with extras like buttered toast, sauces, or a fresh juice or coffee for a complete, easy weekend treat.
