The perfect poached egg might have been elusive in the past but using your air fryer will now mean they are cooked to perfection every time. But Teamed with avocado, and sour dough toast these air fryer poached eggs will be sure to get your day off to a great start – flavoursome, filling and energising.
With your air fryer at the ready your eggs will be cooked and ready to go in no time, and you will be left with minimal mess to clear up; a win win situation, especially for those busy morning where you are trying to hustle the kids out the door and off to school. This air fried poached eggs and avocado toast recipe is ever so simple and delicious! Perfect for a healthy breakfast or brunch. Eggs are a great way to start the day and your air fryer just made them even easier to do.
So I had the pleasure of sharing this recipe with Alexis Conran on the Channel 5 TV show “Air Fryers: An Easy Way to Lose Weight” first aired on 28 February 2024! We demonstrated the ease and convenience of cooking with air fryers. Now, I’m excited to share it with you here so you can enjoy the same delicious results in your own kitchen.

SERVES 2 people
KIT you will need an air fryer.
Ingredients for air fryer poached eggs
4 eggs
10 small vine tomatoes (4 per serving)
4 slices of sour dough
Handful of fresh parsley
Drizzle of chill oil
Vegetable oil to grease the small bowls
Seasoning
1 ripe avocado (1/2 each)
Method
First set your air fryer to 185c. Then line glass dishes with a small dash of vegetable oil and crack your eggs into each dish.
Drizzle vegetable oil on to the vine tomatoes and season then place into a ceramic dish or silicone liner.
Place your eggs and tomatoes into your air fryer and cook for 5 to 6 mins. Depending on the size of your eggs and tomatoes they may need a little longer. Slice the sour dough and put into a toaster or place them into your air fryer drawer for the final 2 minutes.
Whilst the food is cooking, slice your avocado and when the toast is ready, place onto the bread.
So to serve, drizzle a little chilli oil over the eggs along with a scatter of parsley.
Season your air fryer poached eggs to taste.
