Air Fryer Tomato Soup

Enjoy this deliciously creamy air fryer tomato soup made with roasted tomatoes, garlic, shallots and herbs. This simple, healthy and comforting roasted vegetable soup is prepared and ready less than 20 minutes. You may not think about roasting your vegetables in an air fryer but it is so much quicker and cheaper than using the conventional oven. You only need a few simple fresh ingredients and some seasonings to enjoy this comforting dish with fresh bread or a cheese toastie.

This dish is perfect for cosy lunches in the colder months or as a starter for a dinner party all year round. This is such a simple and healthy dish made even easier thanks to the speedy air fryer. You can not beat a warm bowl of home made soup for a quick and easy lunch for yourself. This also freezes well so you can prepare batches for later.

SERVES 2 people

KIT you will need an oven proof dish, an air fryer and a food blender

Ingredients for air fryer tomato soup

400g of fresh tomatoes, chopped

3 shallots, peeled and chopped

3 cloves of garlic, peeled and chopped

A tablespoon of dried oregano

2 tablespoons of diced chorizo

A tablespoon of Worcestershire sauce

A teaspoon of Tobasco sauce

400ml of chicken or vegetable stock

Olive oil spray

To serve:

A tablespoon of crème fresh (optional)

A handful of fresh basil (optional)

Crusty fresh bread or a toastie

Method

So first of all, roughly chop your tomatoes, then peel and chop your shallots and garlic. Then place the in to your oven proof dish. Spray with olive oil and cook in the air fryer on 190c for 10 to 12 minutes or until the onions and tomatoes are soft.

So half way through the cooking time, open up the air fryer drawer and add in your diced chorizo, Worcestershire sauce and Tobasco sauce. Then stir well and close the air fryer drawer again.

Then whilst the vegetables finish cooking, prepare your stock using 400ml of boiling water and a jelly stock cube. I like to use chicken stock but you can also use a vegetable stock cube if you prefer.

Once cooked, carefully remove the dish from the air fryer. Then blitz your vegetables and stock in a blender until the soup is smooth.

Serve your air fryer tomato soup hot with a dollop of crème fresh, a handful of basil leaves and my warm crusty buttered air fryer bread rolls or a toastie. You could also top with grated cheese or croutons.
