Air Fryer Tomato Soup

To make this rich, creamy, and flavorful soup, all you need are a few fresh ingredients: ripe tomatoes, garlic, shallots, chorizo, and your choice of herbs. Roasting the vegetables in the air fryer brings out their natural sweetness, enhancing the depth of flavor in the soup. After roasting, blending everything together creates a smooth and comforting texture. The addition of chorizo adds a little extra warmth and spice, though you can easily leave it out for a vegetarian version of the soup.

This dish is perfect for cozy lunches during the colder months, but it can also serve as a delicious starter for a dinner party any time of the year. The best part is how easy and healthy it is to make. With minimal ingredients and little preparation, you’ll have a bowl of homemade soup in no time. KIT you will need an oven proof dish, an air fryer and a food blender

Ingredients for air fryer tomato soup

400g of fresh tomatoes, chopped

3 shallots, peeled and chopped

3 cloves of garlic, peeled and chopped

A tablespoon of dried oregano

2 tablespoons of diced chorizo

A tablespoon of Worcestershire sauce

A teaspoon of Tobasco sauce

400ml of chicken or vegetable stock

Olive oil spray

To serve:

A tablespoon of crème fresh (optional)

A handful of fresh basil (optional)

Crusty fresh bread or a toastie

Method

Start by roughly chopping your fresh tomatoes – use ripe, juicy ones for the best flavour. Next, peel and finely chop the shallots and garlic cloves. These aromatics will add depth and richness to your soup. Once everything is prepped, place the chopped tomatoes, shallots, and garlic into an ovenproof dish that fits comfortably inside your air fryer basket.

Lightly spray the mixture with olive oil to encourage caramelisation and help bring out the natural sweetness of the vegetables. Preheat your air fryer to 190°C, then cook the mixture for around 10 to 12 minutes. You’re looking for the tomatoes to soften and start releasing their juices, while the shallots and garlic become golden and fragrant.

At the halfway mark – around 5 to 6 minutes in – carefully open the air fryer drawer and add in your diced chorizo. Then drizzle in a dash of Worcestershire sauce and a few drops of Tabasco for a subtle, spicy kick. Stir everything well to coat the ingredients, then return the dish to the air fryer to finish cooking.

While that’s roasting, prepare your stock. Dissolve one jelly stock cube in 400ml of boiling water. Chicken stock works beautifully with the chorizo, but for a vegetarian option, simply use vegetable stock.

Once everything is cooked and fragrant, remove the dish from the air fryer. Carefully transfer the contents to a blender, pour in the hot stock, and blend until silky smooth.

Serve your air fryer tomato soup hot with a dollop of crème fresh, a handful of basil leaves and my warm crusty buttered air fryer bread rolls or a toastie. You could also top with grated cheese or croutons.

Tips for Air Fryer Tomato Soup

1. Use ripe, flavourful tomatoes
For the best tasting soup, choose ripe tomatoes like Roma, cherry, or vine tomatoes. They roast beautifully and bring a natural sweetness that balances the acidity.

2. Don’t skip the garlic and onion
Adding whole garlic cloves and chunks of onion to the roasting tray (or dish) boosts the depth and savoury base of the soup. Roast them alongside the tomatoes for a richer flavour.

3. Preheat your air fryer
Pre heating your air fryer helps to caramelise the tomatoes quickly and evenly, giving your soup that lovely roasted flavour without overcooking the softer ingredients.

4. Use a baking dish or foil tray
If your air fryer basket has large holes, place the tomatoes, onions, and garlic in a small ovenproof dish or foil tray to avoid losing any juices. The juices are essential for a rich soup base.

5. Add herbs and seasoning before roasting
Toss your ingredients in olive oil, salt, pepper, and herbs like thyme or basil before air frying. This infuses the soup with flavour from the start.

6. Blend until smooth (or keep it chunky)
Once roasted, let everything cool slightly before blending. For a silky finish, use a high-speed blender. For a more rustic feel, pulse until slightly chunky.

7. Adjust consistency
Add a splash of vegetable stock, cream, or coconut milk after blending to reach your preferred thickness. Then taste and season again if needed.

8. Finish with toppings
Top your bowl of tomato soup with a swirl of cream, fresh basil leaves, crispy croutons, or even a drizzle of balsamic glaze for extra flair!
