This air fryer sausage bake is a comforting dish, perfect for autumn days or cold winter nights when you need something warm to fill you up. The entire family will love it, and you’ll find them coming back for seconds! Not only is it delicious, but it’s also a sneaky way to get some extra veggies onto your kids’ plates. The combination of peppers, onions, and tomatoes slowly cooking down into a rich, thick, and gravy-like sauce makes this dish irresistibly tasty.

What I love most about this recipe is its versatility. You can serve it with big chunks of fresh, crusty bread for dipping into that lovely tomatoey sauce, or opt for creamy mashed potatoes if that’s more to your liking. Either way, it’s the perfect comfort food for a family dinner. And for those who prefer plant-based, swap the pork sausages for a vegan or vegetarian alternative. And skip the Worcestershire sauce for a fully vegan version.

This air-fryer sausage bake is flexible, making it easy to adapt based on what you have in your kitchen. It’s also a fantastic way to use up any vegetables sitting in your fridge that need to be used before they go to waste, making it an efficient meal for clearing out your vegetable drawer. Plus, it’s a lifesaver on busy weeknights when you need something nutritious, satisfying, and ready in no time, without spending hours in the kitchen.

Whether you’re feeding a crowd or just your family, this air fryer sausage bake is sure to become a favourite for its simplicity, flavour, and comforting nature.

Ingredients for air fryer sausage bake

6 chipolata sausages

1 tablespoon of vegetable oil

1 large red onion, peeled and sliced

A red pepper, de-seeded and sliced

1 bulb of garlic

1 x 400g tin of chopped tomatoes

A teaspoon of Worcestershire sauce

Sea salt and freshly ground black pepper

Method

This air fryer sausage bake is hearty, comforting, and super easy to throw together – perfect for a fuss-free dinner any night of the week. To begin, place your sausages in a large, air fryer-safe dish. Then drizzle over a little vegetable oil to help them brown and crisp nicely as they cook. Pop the dish into your air fryer and cook at 190°C for around 10 minutes.

While the sausages are cooking, take this time to prep your veg. Thinly slice one onion and one bell pepper, and peel and finely chop a couple of garlic cloves. After the first 10 minutes of cooking, open the air fryer and give the sausages a good shake or turn to ensure they’re browning evenly on all sides.

Next, add your prepped onions, peppers, and garlic to the dish, along with a tin of chopped tomatoes. Give everything a gentle stir to combine. Then splash in a generous amount of Worcestershire sauce for that extra depth of savoury flavour. Finish off with a good pinch of salt and a grind of black pepper, adjusting to your taste.

Return the dish to the air fryer and cook for a further 10 to 15 minutes, or until the sausages are fully cooked through and the tomato sauce has thickened beautifully. The veggies will soften and soak up all those rich, savoury juices.

Once done, carefully remove the dish and serve hot with crusty bread – perfect for mopping up the delicious tomatoey gravy. A true one-dish wonder!

So for a truly home-made experience you could even serve with home-made air fried bread rolls. You can find my simple air fryer bread rolls recipe here, these are so popular that I have even baked them on the Channel 5 TV show AIR FRYERS: SUNDAY LUNCH MADE EASY.

Tips for Air Fryer Sausage Bake

Air fryer sausage bake is a quick, hearty, and delicious meal that’s easy to make and packed with flavour. Follow these tips to get the best results every time:

1. Choose quality sausages
Opt for good-quality sausages with a balanced fat content as this ensures juicy, flavourful results. Pork, beef, or even vegetarian sausages all work well depending on your preference.

2. Prep your vegetables
Cut your veggies into even-sized pieces so they cook evenly. Root vegetables like potatoes, carrots, and parsnips work great, as do peppers, onions, and mushrooms.

3. Par-cook hard veggies if needed
If using dense vegetables like potatoes, consider parboiling or microwaving them briefly before air frying. This helps them cook through without burning.

4. Season generously
Toss your sausages and vegetables with olive oil, salt, pepper, and herbs like rosemary, thyme, or smoked paprika for extra depth of flavour.

5. Preheat your air fryer
Preheat to around 180°C (356°F) for 2–3 minutes. This ensures your sausage bake cooks evenly and gets that crispy finish.

6. Don’t overcrowd the basket
Arrange the sausages and veggies in a single layer with some space around them. Overcrowding can lead to steaming rather than roasting.

7. Shake or toss halfway
Give the basket a good shake or stir the ingredients halfway through cooking to promote even browning on all sides.

8. Cook time varies
Generally, cook for 20–25 minutes at 180°C, but check for doneness regularly. Sausages should be cooked through and vegetables tender and caramelised.

9. Add extras at the end
For a finishing touch, add chopped fresh herbs or a drizzle of balsamic glaze just before serving.

10. Serve with your favourite sides
Pair with mustard, crusty bread, or a simple salad for a satisfying meal.
