Air Fryer Salmon Salad

This air fryer salmon salad is a perfect healthy air fried lunch. Salmon cooks so beautifully in the air fryer, keeping it moist and slightly pink too. This is a little twist to a classic salad that I have been cooking for many years, adding that Greek taste with the feta cheese just brings the dish together and the lemon cuts through the ingredients beautifully. It is worth keeping in mind that depending on the size of your fish fillet, you may need to adjust the cooking time accordingly. All air fryers cook so differently as well.

COOK 10 to 12 minutes

SERVES 2 people

KIT you will need an air fryer and air fryer racks.

Ingredients for air fryer salmon salad

200g of fresh Salmon fillets

2 little gem lettuce

1 large tomato, thinly sliced

1/4 of a cucumber, diced

1 red onion, peeled and diced

1/2 a cup of feta cheese, crumbled

1 tablespoon of fresh dill, finely chopped

1/2 an avocado, peeled and sliced

8 to 10 asparagus spears

2 teaspoons of dried oregano

1 lemon

Seasoning

Olive oil spray

Method

So first spray the salmon fillets lightly with some olive oil spray, season well with sea salt and black pepper and sprinkle over your dried oregano. Place the salmon fillets directly in to your air fryer drawer and cook on 200c for 10 to 12 minutes. Use a fork to check if the fish flakes in the thickest part; if not, cook for 1 minute more, or until the salmon is cooked throughout.

Whilst the salmon is cooking, prepare your little gem lettuce by peeling off each leaf, washing and placing directly onto a board, dice your red onion, as well as your cucumber and scatter these over your lettuce. Thinly slice your tomatoes, placing them around your platter.

When there is approximately 4 minutes left to cook, pop your air fryer racks in to the air fryer drawer, over the salmon and carefully place in your asparagus. Cook for a further 4 to 5 minutes or until the asparagus is slightly browned.

When the salmon is cooked, carefully remove it from the air fryer basket and place to rest for a minute or two. Then scatter your asparagus around your salad platter, along with the fresh dill. Then crumble some feta cheese over the salad. Finally place your salmon on the top and along with your sliced avocado, fresh dill and a squeeze of lemon.
