Air Fryer Caesar Salad

My delicious air fryer Caesar salad is just perfect for a healthy lunch or starter. Or a light al fresco dinner during the warm Summer months. This classic retro salad is one of my all time favourites, and thanks to the speedy air fryer it is quicker, healthier and easier than ever to prepare. This air fried Chicken Caesar Salad is such a delicious meal that will be ready in just twenty minutes. The tender and juicy chicken breast goes perfectly with the dressed lettuce, crunchy croutons, and tangy parmesan cheese.

This recipe is so easy to prepare, especially on a busy night during the week. The chicken cooks beautifully in the air fryer, and is much quicker than a traditional oven or grill. You can make the Caesar dressing yourself from scratch but I prefer the convenience of store bought dressing. This is a versatile dish as you can use a variety of salad leaves such as spinach.

SERVES 2 people

KIT you will need an air fryer and mixing bowl.

Ingredients for air fryer caesar salad

2 chicken breasts

25g of iceberg lettuce

15g of Parmesan cheese, peeled

1 slice of crusty bread

4 tablespoons of store-bought Ceasar salad dressing

1 teaspoon of oregano

Olive oil

Seasoning

Method

First spray a little olive oil on to your chicken breasts and season generously with sea salt and black pepper. Next place your chicken in to your air fryer and cook on 190c for around 18 to 20 minutes, or until the chicken is cooked throughout. But turn your chicken breasts over around half way through to ensure they both cook evenly in the air fryer.

So whilst your chicken is cooking, you can prepare your croutons. Cut a slice of crusty bread (white, brown or wholemeal, whichever you prefer) into similar sized cubes. Pop into a large mixing bowl with a tablespoon of olive oil, a teaspoon of oregano and season with salt and pepper. Then mix together well ensuring all the croutons are coated in oil.

When your chicken has five minutes left to cook, add your croutons to the drawer and air fry together with the chicken for the final 5 minutes.

Take your chicken breasts out of the air fryer and leave to rest for a minute or two before slicing.

Whilst your chicken is resting, wash and slice your iceberg lettuce and put into two serving bowls. Shave over your parmesan cheese then add your sliced chicken. Pour over two tablespoons of Caesar salad dressing to each salad bowl then sprinkle over your air fried croutons. Serve your air fryer Caesar salad as a light lunch or as a starter to a dinner.
