Ingredients for air fryer quiche

Ricotta cheese

Spinach, washed and chopped

1 spring onion, thinly sliced

2 eggs

Green salad to serve

Method

In a large mixing bowl, I combined creamy ricotta cheese with finely chopped spinach and sliced spring onions. To bind everything together, I cracked in two eggs and mixed thoroughly until all the ingredients were evenly distributed. This creates a rich, savoury mixture that’s full of flavour and naturally low in carbs.

Next, I spooned about a tablespoon of the quiche mixture into each section of a silicone muffin tray. These silicone moulds are ideal for the air fryer as they withstand the heat well and make it easy to remove the quiches once they’re cooked.

I carefully placed the silicone moulds into the air fryer drawer and cooked the mini quiches at 180°C for around 10 minutes. It’s always a good idea to check them halfway through cooking, as air fryer models can vary and some may cook faster than others. You’re aiming for a lightly golden top and a set centre.

Then once cooked, I served these mini crustless quiches with a simple green salad, lightly drizzled with your favourite dressing. Balsamic or lemon vinaigrette works beautifully.

These air fryer mini quiches are not only a super light and delicious lunch option ready in under 15 minutes, but they’re also incredibly versatile. They make a fantastic breakfast, especially for busy mornings when you need something quick and wholesome. You can prep them the night before and simply reheat, or batch cook for the week ahead as part of your meal prep routine.

Whether you’re enjoying them warm out of the air fryer or cold as a grab-and-go snack, they’re bound to be a hit. Add herbs, cheese, or even chopped cooked bacon to switch up the flavours. However you serve them, these mini quiches are a fuss-free favourite you’ll come back to again and again.

Tips for Air Fryer Quiche

1. Use silicone muffin moulds or ramekins
Silicone moulds work perfectly in the air fryer and make for easy removal. Ramekins also work well if your air fryer has space. Lightly grease them to prevent sticking.

2. Whisk the egg mixture well
Combine eggs with a splash of milk or cream (dairy or non-dairy) for fluffiness. Whisk thoroughly to incorporate air, which helps the quiche puff up slightly.

3. Add fillings sparingly
Use pre-cooked or finely chopped vegetables (like spinach, mushrooms, or peppers), cooked meats (like bacon or ham), and shredded cheese. Don’t overfill—too much can make them soggy or cause overflow.

4. Season well
Salt, pepper, garlic powder, and herbs like chives or parsley enhance the flavour. Cheese adds extra saltiness, so taste and adjust as needed.

5. Preheat the air fryer
It is always a good option to preheat to 160°C (320°F) for a couple of minutes. This will help the quiches cook evenly from the start. Leaving the crisper plates in the bottom of the air fryer drawer also helps to cook the food evenly.

6. Don’t overfill moulds
Fill each mould about three quarters full to allow room for the eggs to rise. Overfilling may lead to spills or uneven cooking.

7. Cook low and slow
Air fry at 160°C (320°F) for 10 to 12 minutes, or until the tops are set and slightly golden. Every air fryer varies—check with a toothpick in the centre; it should come out clean.

8. Cool before removing
Let the quiches cool for a few minutes before removing from moulds. They firm up as they cool, making them easier to handle.

So these crustless mini air fryer quiche are just perfect for on-the-go breakfasts or lunchboxes!
