“Marry Me Chicken” is a popular name for a creamy, flavourful chicken dish that is often described as being so delicious that it could inspire someone to propose marriage! It typically features chicken cooked in a rich, creamy sauce made with ingredients like cream, sun dried tomatoes, garlic, and seasonings like basil and parmesan. Traditionally the chicken is often pan seared and then simmered in the creamy sauce, creating a comforting and indulgent meal. But this dish can be cooked in the air fryer in less time and with less washing up! This easy air fryer marry me chicken recipe features juicy golden chicken in a simple creamy sun-dried tomato sauce. Perfect for Valentines Day, a date night or for an easy family week night dinner!

SERVES 2 people
KIT you will need an air fryer, a mixing bowl and kitchen roll
Ingredients for air fryer marry me chicken
2 boneless, skinless chicken breasts, sliced
2 tablespoons of corn flour
olive oil spray
1 teaspoon of dried oregano
1 teaspoon of smoked paprika
A teaspoon of garlic puree
1 tablespoon of tomato puree
75ml of chicken stock
2 tablespoons of grated parmesan
8 sun dried tomatoes, sliced
175ml of single cream
Salt and pepper, to taste
A handful of fresh basil leaves
Method
So start by prepping the Chicken. First pat the chicken breasts dry with the kitchen roll then cut them into bite sized pieces. Put the chicken pieces in a mixing bowl and add the cornflour. Mix together so that the all the chicken is coated well in flour. Season well with salt and pepper then spray with olive oil. Mix together again then put the seasoned chicken directly into the air fryer drawer with the crisper tray removed. Or use an oven proof dish that fits into your air fryer.
Cook on 200°C for around 8 minutes until the chicken starts to brown. Stir the chicken half way through the cooking to ensure that it cooks evenly.
Once the chicken has started to brown add the dried oregano, smoked paprika, half of the grated parmesan, garlic puree, tomato puree, single cream, chicken stock and sun dried tomatoes.
Stir the ingredients together well and cook for a further 8 to 10 minutes or until the sauce starts to thicken.
I served mine with pasta but you can serve yours with rice. Sprinkle with fresh basil leaves and the rest of the grated parmesan cheese.
You could also serve with other favourite sides, like creamy mashed potatoes or a fresh green salad. Enjoy this creamy, savoury dish that might just make someone fall in love with you!
