Ingredients for Air Fryer Carrot Fritters

2 Carrots, peeled and grated

2 Sweet potatoes, peeled and grated

1 onion, peeled and grated

1 teaspoon of cumin

A teaspoon of mustard seeds

1/2 a cup of breadcrumbs

A handful of fresh coriander

2 eggs, beaten

Sea salt and ground black pepper

Method

I began by peeling two sweet potatoes, then grated them along with a couple of carrots and a small onion. I placed all the grated vegetables into a large mixing bowl, ready to be transformed into crispy, flavorful fritters. The sweetness of the sweet potatoes pairs perfectly with the earthy carrots and the subtle zing of the onion.

Next, I added a teaspoon of cumin and a teaspoon of mustard seeds, which brought a wonderful depth of flavor to the mixture. Then, I stirred in half a cup of breadcrumbs to help bind everything together, along with a handful of fresh coriander for a burst of freshness. The addition of coriander gave the fritters an aromatic lift, making them even more enticing.

I cracked two eggs into the bowl and beat them lightly before mixing them into the vegetable blend. The eggs helped bring everything together, ensuring the patties would hold their shape during cooking. Then I seasoned the mixture with a pinch of salt and pepper.

I then shaped the mixture into small patties by hand and lightly sprayed each one with fry light oil to encourage that golden, crispy exterior. Into the air fryer they went, set to 180°C for around 20 minutes. I made sure to turn the fritters halfway through the cooking process to ensure both sides were evenly crispy.

For an extra kick, you could experiment with additional seasonings like smoked paprika, or top them with sesame seeds for added texture. Tips for Air Fryer Carrot Fritters

1. Grate your carrots finely
Use the fine side of a box grater or a food processor to shred your carrots. Finer shreds hold together better and cook more evenly in the air fryer.

2. Remove excess moisture
Once grated, squeeze the carrots in a clean tea towel or paper towels to remove extra liquid. This helps the fritters crisp up instead of steaming.

7. Don’t overcrowd the basket
