Then, I flipped the onion upside down (root end facing up, just like in the photo), and made even slices down through the onion, stopping short of the root so that it would stay intact and bloom out as it cooked.
In a small bowl, I whisked together two eggs with a tablespoon of mayonnaise and a good squeeze of hot sauce to create a creamy, spicy coating. In a separate bowl, I poured in about three tablespoons of panko breadcrumbs, ready for the next step.
Next, I dipped the prepared onion into the egg mixture, making sure it was fully coated – even between the petals – so the breadcrumbs would stick nicely. Then, I gently transferred the onion to the panko bowl, turning and pressing it to coat all sides and edges.
