1 cup of sweetcorn
5 spring onions, thinly sliced
1/2 a cup of plain flour
1 tablespoon of olive oil
A fresh red chilli, thinly sliced
1 large egg, beaten
1 teaspoon of baking Powder
A handful of parsley, chopped
Method
To make these delicious air fryer corn fritters, start by gathering all of your ingredients. In a large mixing bowl, combine one cup of sweetcorn, five thinly sliced spring onions, and half a cup of plain flour. Add a tablespoon of olive oil for richness, finely sliced red chili for a bit of heat, and one egg to help bind the ingredients together. So for a fresh, vibrant flavour, toss in a teaspoon of baking powder and a handful of chopped parsley. The baking powder will give the fritters a lovely lightness, while the parsley adds a burst of colour and fragrance.
So once all the ingredients are in the bowl, give the mixture a good stir to ensure everything is evenly combined. Next, scoop out a large tablespoon of the mixture and gently shape it into a patty using your hands. Then place each patty onto a baking sheet, being sure to keep them similar in size for even cooking. Continue this process until all the mixture has been formed into fritters.
Now, carefully transfer the fritters into your air fryer basket, making sure they don’t overlap. Then set your air fryer to 180°C and cook the fritters for about 15 minutes. Check halfway through to ensure they’re cooking evenly. You want them to be golden and crisp on the outside, with a tender, flavourful interior.
Once cooked, serve your air fryer corn fritters with a side of spicy mayo dip. so the creamy mayo, with a spicy kick, pairs beautifully with the sweetness of the corn. A crisp green salad adds a refreshing crunch, balancing out the rich fritters and bringing a lightness to the dish. These fritters are perfect for a quick snack, appetizer, or even as a side dish for a main meal!
Tips for Air Fryer Corn Fritters
1. Use fresh or tinned corn
Fresh, in-season corn kernels add the best sweetness and crunch, but canned or frozen corn works well too. Just make sure to drain and pat dry canned corn to avoid soggy fritters.
2. Don’t overmix your batter
Combine your ingredients gently to avoid tough fritters. Overmixing can develop gluten and make the fritters dense rather than light and fluffy.
3. Add binding ingredients
Use eggs and a little flour or cornmeal to bind your fritters. This helps them hold together while cooking and gives a nice texture.
4. Preheat your air fryer
Preheat to 180°C (356°F) for 2–3 minutes. This ensures your fritters start crisping up immediately, creating that irresistible golden crust.
5. Use a little oil or cooking spray
Lightly brush or spray the fritters with oil before air frying. This promotes even browning and prevents sticking without making them greasy.
6. Don’t overcrowd the basket
Arrange fritters in a single layer with some space between them. Overcrowding can cause uneven cooking and soggy spots.
7. Flip halfway through cooking
Turn the fritters after about 6-7 minutes to get an even golden crust on both sides. Cook for around 12-15 minutes total until crispy and cooked through.
8. Season to taste
Add chopped herbs, chili flakes, or cheese to the batter for extra flavour. Serve with a dollop of sour cream, salsa, or a squeeze of lime for a tasty finish.
9. Serve immediately
Corn fritters taste best hot and crispy straight from the air fryer, so enjoy them fresh for the best texture.
Follow these tips and your air fryer corn fritters will come out perfectly crispy and delicious every single time!
