90g of flour
50g of rolled oats
20g of low fat spread
80g of brown sugar
1 egg
1 red apple, grated
1/2 teaspoon of cinnamon
1/2 teaspoon of vanilla extract
Pinch of salt
1/2 teaspoon of bicarbonate of soda
Method
I literally just popped all the ingredients into a mixing bowl – oats, grated apple, a little cinnamon, a drizzle of honey or maple syrup, and a touch of baking powder – and gave everything a good stir until well combined. The mix should be soft but hold together when pressed. It’s a really simple, no-fuss dough that comes together in minutes and smells incredible thanks to the warm spices and apple.
Then, using my hands, I rolled the mixture into small balls about the size of a golf ball. From there, I gently flattened each one into a little cookie-shaped disc. The shape helps them cook evenly and get that slightly crisp outside while staying soft inside.
Next, I sprayed both sides of the cookies with a light mist of oil to help them crisp up, then placed them in my air fryer basket. I set the temperature to 180°C and air fried for around 8 to 10 minutes, turning them halfway through.
