Ingredients for Air Fryer Chicken Kiev

For the garlic butter:

50g unsalted butter, softened

2 garlic cloves, finely minced

1 tbsp fresh parsley, finely chopped

Zest of ½ lemon

Pinch of salt

For the chicken:

2 large chicken breasts

Salt and pepper

2 tbsp plain flour

1 egg, beaten

60g breadcrumbs (panko or regular)

1 tbsp olive oil (optional)

Method

In a small bowl, mash the softened butter with the minced garlic, chopped parsley, lemon zest, and a pinch of salt until well combined. This is your flavour bomb, so don’t be shy with the garlic! Spoon the mixture onto a small piece of cling film or baking paper and roll it into a small log. Twist the ends to seal and pop it in the freezer for at least 15–20 minutes. It should be firm enough to slice cleanly. This helps it stay put inside the chicken while cooking.

Place a chicken breast on a chopping board and, using a sharp knife, carefully cut a deep pocket along the side. Try to keep the opening as small as possible while creating enough space inside to hold the butter. Repeat with the second breast. Slice your chilled garlic butter in half and push one piece into each chicken pocket. Gently press the edges to seal and, if needed, secure with cocktail sticks to help prevent leaks while cooking.

Set up three bowls: one with seasoned flour, one with the beaten egg, and one with breadcrumbs (mix these with a little olive oil for extra crunch). Dredge each chicken breast in flour, ensuring it’s well-coated, then dip into the egg, and finally into the breadcrumbs. Press the crumbs on firmly for good coverage.

Preheat your air fryer to 190°C (375°F). Place the breaded chicken breasts in the basket, leaving space around each one. Air fry for 12–15 minutes, flipping halfway, until golden and crisp. The chicken should be cooked through with an internal temperature of 75°C (165°F).

Let the chicken rest for a few minutes before serving. This helps the buttery filling settle slightly so it doesn’t spill out immediately when sliced. Enjoy!.

Tips for Perfect Air Fryer Chicken Kiev

1. Freeze the butter properly
Make sure your garlic butter is really firm before stuffing the chicken breasts. This helps it stay inside during cooking and gives you that classic, satisfying buttery centre. You can even make a batch of garlic butter ahead of time and keep it in the freezer for easy use whenever you need it.

2. Seal the chicken securely
Use cocktail sticks or toothpicks to keep the opening tightly closed. If you are finding it hard to stuff the breast without the butter escaping, you can also lightly flatten the chicken and roll it around the butter like a parcel. Just secure the edges well.

3. Don’t skip the flour
So it might seem tempting to jump straight to the egg and breadcrumbs, but the flour really helps everything stick and gives the coating better texture and coverage.

4. Use panko for crunch
Panko breadcrumbs give the crispiest results in the air fryer. If you are using regular breadcrumbs, mix in a little olive oil or a sprinkle of grated Parmesan for extra flavour and golden colour.

5. Flip for even browning
Halfway through cooking, flip your Kievs to make sure they cook evenly and develop that golden, crunchy crust on both sides.

6. Don’t overcrowd the basket
Give the chicken space to cook. If they are too close together, the coating may go soggy rather than crisp.

7. Let them rest
Allowing the cooked Kievs to rest for a few minutes stops the butter from gushing out immediately when you cut into them. It also gives the juices a chance to redistribute, keeping the chicken juicy and tender.
