Air Fryer Chicken Fajitas

This air fryer chicken fajitas recipe is a perfect “cheat” meal! I usually make my own fajita seasoning, but sometimes life just gets so busy that you have to go easy on yourself and just use the packet mix! But you can always add some extra chilli for more kick if you like your spicy. These fajitas are low-carb and thanks to the air fryer, they don’t need any oil either so are low in fat. So this is a much quicker and healthier option than pan frying your chicken.

PREP 15 minutes, excluding marinating time

COOK 15 minutes

SERVES 2 people

KIT you will need an air fryer and a mixing bowl

Ingredients for air fryer chicken fajitas

2 chicken breasts, sliced into strips (beef or pork also work just as well)

A drizzle of vegetable oil

A Fajita seasoning mix (store bought or home made)

2 mixed peppers, de-seeded and sliced

1 brown onion, peeled and sliced

6 medium flour tortilla wraps

To serve:

Iceberg lettuce, washed and sliced

Sliced Jalapeno chilli peppers (if you like it spicy)

Grated cheeses

Sour cream

Fresh coriander, chopped

The juice of a lime

Method

Start by cutting your chicken breasts into strips and placing in a mixing bowl. Drizzle with olive oil then add your fajita seasoning. And mix well with your hands or a spoon until all the chicken strips are coated in seasoning. Then marinate the seasoned chicken for at least an hour in the fridge. Of course the flavour will be better if you marinate them for longer or better still overnight in the fridge.

Then peel and thinly slice your onions, and de-seed and slice your peppers into strips. Add your vegetables to the mixing bowl with the marinated chicken and mix well. Transfer the ingredients directly into your air fryer drawer, leaving the crisper plate in. You could use an oven proof dish or liner to keep your air fryer clean. And cook on 200C for around 15 minutes, shaking the air fryer basket twice during this time to ensure an even cook.

Before serving, warm your tortilla wraps in the microwave for about 1 or 2 minutes.

Then serve your air fryer chicken fajitas with your sour cream, grated cheese, sliced jalapenos and sliced iceberg lettuce. Then roll them up and enjoy.
