Air Fryer Turkey Fajitas

Here’s a taste of Mexico in your own dining room with my air fryer turkey fajitas! So you don’t need an endless list of ingredients or hours of cooking time to create something full of bold, vibrant flavours. This recipe proves that great-tasting dishes don’t have to be complicated. In fact, these turkey fajitas can be whipped up and ready to serve in under 30 minutes, making them perfect for a quick weeknight dinner or a casual gathering with friends.

So I had the pleasure of cooking this healthy air fryer turkey fajitas recipe with Alexis Conran on the Channel 5 TV show Air Fryers: Do You Have The Right One, which first aired on 20th March 2024. It was a joy to share such a simple yet flavourful recipe, showcasing how versatile the air fryer really is. The air fryer isn’t just for making chips or chicken wings; you can prepare a wide variety of meals, and this turkey fajitas recipe is the perfect example. It’s proof that you can enjoy delicious, flavourful dishes without spending hours in the kitchen!

KIT you will need an air fryer and mixing bowl.

Ingredients for Air Fryer Turkey Fajitas

3 mixed peppers

1 large onion

400g of turkey breasts

For the spice mix:

1 teaspoon of paprika

1 teaspoon of cumin

1/2 a teaspoon of cayenne pepper

1/2 a teaspoon of turmeric

1 teaspoon of garlic paste

1/2 a teaspoon of ground coriander

1 thumb size piece of ginger grated

Lime – juice and the grated zest

Dash of oil to mix

Seasoning to taste

To serve:

1/2 an ice berg lettuce

A handful of coriander

1 large red chilli pepper, de seeded and sliced

Extra lime to serve

Method

These air fryer turkey fajitas are a quick, healthy, and flavour-packed lunch that you can have ready in no time. Start by making your spice mix – combine your favourite fajita spices such as smoked paprika, cumin, garlic powder, chilli powder, oregano, salt, and pepper in a small bowl. Give them a good stir to ensure everything is well blended, then set the mix aside.

Next, prepare your vegetables and turkey. So slice the red and green bell peppers, onions, and turkey breast into thin strips. Then add everything into a large mixing bowl and sprinkle over your prepared spice mix. Use tongs or your hands to toss the mixture thoroughly, ensuring the turkey and veggies are well coated in those fragrant spices.

Then transfer the mixture to your air fryer basket or tray in an even layer. So set the air fryer to 180°C and cook for 12 to 15 minutes, stirring once halfway through to ensure even cooking. The turkey should be cooked through, and the veggies slightly charred and tender.

While the fajita mix is cooking, prepare your lettuce “bowls.” Use two or three iceberg lettuce leaves stacked together to create a sturdy wrap that will hold your filling. So once the turkey mixture is ready, spoon it generously into each lettuce bowl.

Then garnish with freshly chopped coriander, a few slices of red chilli for heat, and a squeeze of fresh lime juice to brighten everything up. So these are perfect as a light, low-carb lunch!

So to make it more indulgent, add a dollop of guacamole or a spoonful of sour cream on top. These creamy toppings balance the spice beautifully and make your air fryer turkey fajitas feel like a real feast. Then serve immediately and enjoy every bite!

Tips for Air Fryer Turkey Fajitas

Turkey fajitas are a quick, healthy, and delicious meal, especially when made in the air fryer. Here’s how to get the best flavour and texture every time:

1. Use lean turkey breast or tenderloin
Choose lean turkey breast or tenderloin for juicy, tender fajitas. Cut the meat into even strips to ensure they cook evenly in the air fryer.

2. Marinate for maximum flavour
Marinate your turkey strips with lime juice, olive oil, fajita seasoning, garlic, and spices for at least 30 minutes or overnight. This not only adds flavour but also tenderizes the meat.

3. Slice veggies evenly
Cut bell peppers and onions into thin, uniform strips. This helps everything cook at the same rate and ensures the veggies get nicely charred but remain tender.

4. Preheat your air fryer
Preheat to 200°C (390°F) for 2–3 minutes before cooking. Preheating helps the turkey sear nicely and keeps the veggies crisp.

5. Don’t overcrowd the basket
Arrange turkey and veggies in a single layer with some space around them. Overcrowding causes steaming instead of roasting, so cook in batches if needed.

6. Toss halfway through
Shake or toss the fajita mix halfway through cooking (about 8 minutes in) to ensure even cooking and browning.

7. Watch cooking times
Turkey cooks quickly, usually 12–15 minutes at 200°C. Check for doneness by cutting into the thickest piece; it should be opaque with no pink inside.

8. Warm your tortillas
Pop your tortillas in the air fryer for 1–2 minutes to warm and slightly crisp them before serving.

9. Add fresh toppings
Top your fajitas with fresh cilantro, sliced avocado, lime wedges, sour cream, or salsa for a vibrant finish.

10. Serve immediately
Air fryer fajitas are best enjoyed straight away while juicy and sizzling hot.
