This slow cooker Chicken Tinga recipe combines the rich, smoky flavours of a traditional authentic tinga with all the convenience of using the slow cooker. Tinga is a popular Mexican stew dish, using scrumptious tender shredded chicken which is seasoned with a blend of tomatoes, chipotle seasoning, and spices, then slow cooked to perfection. KIT you will need a slow cooker.
Ingredients for slow cooker chicken tinga
1 red pepper, de-seeded and sliced
1 onion, peeled and diced
A teaspoon of garlic paste
2 ripe tomatoes, chopped
1 tablespoon of tomato paste
500g of boneless chicken thigh fillets
1 teaspoon of ground coriander
1 teaspoon of mild chilli powder
A teaspoon of Smokey chipotle seasoning
250 ml of chicken bone broth (or chicken stock)
To serve:
Tacos (or tostada if you prefer)
Guacamole
Sour Cream
Sliced iceberg lettuce
Jalapeno peppers
Fresh coriander leaves
A lime
Method
Start by de-seeding and slicing a red pepper then peel and dice a white onion. Then chop two ripe tomatoes. So add your vegetables to your slow cooker. Then open up the boneless chicken thighs and place into your slow cooker. Add your spices, tomato puree and chicken stock to the slow cooker then cook on low for 6 to 7 hours.
Remove each chicken thigh and place onto a chopping board then shred the meat using two forks. Once you have shredded all the chicken thighs then place in a serving bowl.
Then add a squeeze of lime and chopped coriander.
Finally serve you slow cooker chicken tinga in the taco shells topped jalapeno peppers, fresh coriander and a squeeze of lime juice. Serve with a side of Guacamole, Sour Cream and iceberg lettuce.
