Slow cooker chicken Tinga

This slow cooker Chicken Tinga recipe combines the rich, smoky flavours of a traditional authentic tinga with all the convenience of using the slow cooker. Tinga is a popular Mexican stew, using scrumptious tender shredded chicken which is seasoned with a blend of tomatoes, chipotle seasoning, and spices, then slow cooked to perfection. Enjoy the delightful smokey taste and zesty kick of Chicken Tinga while the slow cooker does all the work for you! This popular South American dish is sure to be a hit your your household.

Essential Kit

You will need a slow cooker.

Ingredients


1 red pepper, sliced
1 onion, diced
A teaspoon of garlic paste

2 ripe tomatoes, chopped

1 tablespoon of tomato paste
500g of boneless chicken thigh fillets
1 teaspoon of Ground coriander
1 teaspoon of Mild chilli powder
A teaspoon of Smokey chipotle seasoning
250 ml of chicken bone broth (or chicken stock)
To serve:
Tacos

Guacamole
Sour Cream
Sliced iceberg lettuce
Jalapenos
Fresh coriander
A lime

Method

Start by de-seeding and slicing a red pepper then peel and dice a white onion.

Chop two ripe tomatoes. So add your vegetables to your slow cooker. Open up the boneless chicken thighs and place into your slow cooker. Add your spices, tomato puree and chicken stock to the slow cooker then cook on low for 6-7 hours. Remove each chicken thigh and place onto a chopping board then shred the meat using two forks. Once you have shredded all the chicken thighs then place in a serving bowl. Add a squeeze of lime and chopped coriander. Serve you slow cooker chicken tinga with tacos, Guacamole, Sour Cream, lettuce and Jalapeno peppers.
