Cottage cheese and eggs are great sources of protein, helping to keep you full and satisfied, making these muffins a more balanced choice for any meal. The pine nuts add a nice crunch and are packed with healthy fats that support heart health.

Ingredients for Air Fryer Cheese Scones

Half a sweet potato, peeled and grated

2 grated carrots

2 chopped chillies

1 cup of self raising flour

2 tablespoons of cottage cheese

3 eggs

A handful of grated parmesan cheese

1 tablespoon of pine nuts

A handful of bread crumbs

2 teaspoons of cumin seeds

Salt and pepper to taste

Method

To make these flavour-packed savoury scones, I started by grating half a sweet potato into a mixing bowl. Sweet potato not only adds a natural sweetness but also gives the muffins a lovely moist texture. I then grated two medium carrots and added them to the bowl as well, bringing both colour and extra nutrition to the mix.

Next, I finely chopped two fresh chillies for a bit of heat. You can adjust the quantity depending on your spice preference. To this, I added two tablespoons of cottage cheese for a creamy texture, followed by a cup of self-raising flour to help the muffins rise nicely. I cracked in three eggs, which bind everything together, then stirred in a generous handful of grated Parmesan cheese for a rich, savoury kick.

For some added crunch and depth of flavour, I mixed in a tablespoon of pine nuts and a handful of breadcrumbs, which help hold the mixture together. I also added two teaspoons of cumin seeds for a warm, aromatic flavour that pairs beautifully with the sweet vegetables. Finally, I seasoned with salt and pepper to taste.

Once everything was in the bowl, I gave it all a really good mix to make sure the ingredients were evenly distributed. I then spooned about a tablespoon of the mixture into each silicone muffin mould. Just enough to fill them without overflowing.

I cooked them in batches of three at a time in the air fryer at 160°C for around 25 minutes. Checking halfway through to make sure they were cooking evenly. You’ll know they’re done when the tops are golden and firm to the touch.

I served my savoury scones warm with some butter on top, and they were absolutely delicious – perfect for breakfast, brunch, or as a snack on the go!

Tips for Air Fryer Cheese Scones

1. Use Cold Butter:
Cold butter is key for that light, flaky texture. Cube it straight from the fridge and rub it into the flour quickly to keep the dough cool.

2. Don’t Overwork the Dough:
Mix just until the dough comes together. Overmixing can lead to tough scones instead of light, tender ones.

3. Chill the Dough (Optional but Helpful):
For even better rise and texture, chill your shaped scones for 15 to 20 minutes before air frying. This helps prevent spreading and enhances flakiness.

4. Preheat Your Air Fryer:
Preheat your air fryer to 180°C (356°F) for a couple of minutes so the scones start cooking immediately, which helps give them that classic rise and golden top.

5. Brush with Egg or Milk:
Before cooking, lightly brush the tops with a beaten egg or milk for that beautiful golden finish.

6. Line the Basket:
Use a piece of baking paper or a silicone liner to prevent sticking and make clean-up easier. Just be sure not to block the air vents.

7. Space Them Out:
Give each scone room to expand while cooking. Avoid overcrowding the basket so they bake evenly and don’t stick together.

8. Cook Time:
Air fryer scones typically take 10 to 12 minutes at 180°C. Check them after 10 minutes of cooking. The tops should be golden and the centres cooked through.

9. Let Them Rest:
Allow scones to cool for a few minutes on a wire rack to firm up before serving.

10. Serve Warm with the Classics:
Enjoy your scones fresh with flavoured butters or spreads!
