Air Fryer Salmon Fillets

These perfectly crispy salmon fillets with roasted baby new potatoes, tender asparagus and a creamy yogurt dressing are the ultimate air fryer dinner. Sometimes you just need to make something quick and easy for lunch or dinner and this dish is so perfect for that. It is so simple and delicious, plus it is ready in just 15 minutes! That is why this recipe is a regular meal and a firm favourite in our house. The air fryer is so suited to cooking salmon and you can cook fillets to perfect tenderness in lightning speed. Air frying salmon is a quick and easy way to cook this delicious fish while keeping it moist and flavourful. And if you leave the skin on your fillets it will become lovely and crispy.

SERVES 2 people

KIT you will need an air fryer a mixing bowl and kitchen roll

Ingredients for air fryer salmon fillets

2 fresh salmon fillets

100g of fresh asparagus

200g of baby new potatoes, chopped

A handful of fresh parsley, chopped

2 tablespoons of Greek yogurt

Olive oil spray

Seasoning

The juice of a Lemon (half for the yogurt dressing and half to squeeze on the fish after serving)

Method

So start by patting dry your salmon fillets with kitchen roll and spray them with olive oil, then set aside.

Then chop your baby new potatoes making sure they are all of a similar size; this will ensure a more even cook. Pop them into a bowl and spray with olive oil, giving them a shake, then season well with salt and pepper.

Add your potatoes and salmon into your air fryer basket and set the temperature to 190°C. Then cook for 12 to 15 minutes, or until the salmon is cooked throughout and the potatoes are soft and starting to brown. Remember to shake the potatoes a few times throughout the cooking time.

While the salmon and potatoes are cooking, you can make your yogurt dip. In a bowl, mix your yogurt, half the juice of a lemon, and your handful of finely chopped parsley. Season with salt and pepper and stir.

To prepare your asparagus, chop the ends off and spray with a little olive oil. Add them to the air fryer when you have around 4 minutes left of cooking time.

Serve your salmon, potatoes and asparagus with your yogurt dressing, a squeeze of lemon on your fish, and some crusty bread on the side if you choose. Enjoy!
