Cooking them from scratch at home is so much cheaper and healthier than buying frozen wedges. I find that Russet, Yukon and Maris Piper are some of the best varieties to use for potato wedges. Their floury texture works really well for this dish. Avoid using waxy or starchy potato varieties or new potatoes as they do not work so well.

KIT you will need an air fryer and a large mixing bowl
Ingredients for air fryer potato wedges
4 medium-sized potatoes (Yukon Gold or Russet work well)
2 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of paprika (or smoked paprika)
1/2 a teaspoon of onion powder
1/2 a teaspoon of dried oregano or thyme (optional)
Sea salt and ground black pepper to taste
To serve:
Fresh chopped parsley for garnish (optional)
Method
So first to prep the potatoes by washing and scrubbing them thoroughly. Cut each potato in half lengthwise, then cut each half into 3 or 4 wedges, depending on the size of the potatoes.
I like to soak my wedges in a bowl of water for thirty minutes to remove the starch. Then dry thoroughly with paper towel. But you can skip this step if you prefer. In a large bowl, toss the potato wedges with olive oil, garlic powder, paprika, onion powder, oregano (if using), salt, and pepper. Make sure the wedges are evenly coated.
Preheat your air fryer to 200°C for around 3 to 5 minutes. Then arrange the potato wedges in a single layer in the air fryer basket. Leave the crisper plates in the basket and leaving a little space between the wedges for better air circulation. Cook at 200°C for 18 to 22 minutes, shaking the basket halfway through the cooking time for even crisping.
Check for desired crispiness and if needed, cook for an additional 3 to 5 minutes. Once they are golden and crispy, remove the wedges from the air fryer basket.
Garnish with fresh chopped parsley if desired. Serve as a side dish with dinner or as a snack with your favourite dipping sauce. for example ketchup, mayonnaise, ranch dressing, or even aioli. Enjoy your perfectly crispy air fryer potato wedges!
