1 teaspoon of paprika (or smoked paprika)

1/2 a teaspoon of onion powder

1/2 a teaspoon of dried oregano or thyme (optional)

Sea salt and ground black pepper to taste

Method

Start by prepping your potatoes. So give them a good wash and scrub under cold water to remove any dirt. Especially if you’re leaving the skins on, which adds extra texture and flavour. Once clean, cut each potato in half lengthwise, then cut each half into 3 or 4 wedges depending on the size of your potatoes. Try to keep the wedges roughly the same size so they cook evenly.

If you have time, soak the wedges in a bowl of cold water for about 30 minutes. This helps to draw out excess starch, which results in crispier wedges. After soaking, drain the potatoes and dry them thoroughly with paper towels – this step is key to getting that golden, crispy finish. If you’re short on time, you can skip the soak, but make sure the potatoes are completely dry before seasoning.

Arrange wedges in a single layer with a little space between each one. Cook in batches if needed for even crispiness.

8. Shake or flip halfway
So toss the basket or turn the wedges halfway through cooking (around 10 minutes in) for even browning on all sides.

9. Cook until golden and tender
So wedges usually take around 18 to 22 minutes, depending on thickness and your air fryer model.

10. Serve hot with dips
