Ingredients for Air Fryer Poached Eggs

4 eggs

10 small vine tomatoes (4 per serving)

4 slices of sour dough

Handful of fresh parsley

Drizzle of chill oil

Vegetable oil to grease the small bowls

Seasoning

1 ripe avocado (1/2 each)

Method

Start your day with a breakfast that feels indulgent but is incredibly simple to make. With the help of your air fryer, you can enjoy perfectly poached eggs, roasted vine tomatoes, and creamy avocado on sourdough toast. All with minimal fuss and maximum flavour.

Begin by preheating your air fryer to 185°C (365°F). Lightly grease two small glass or ceramic dishes with a dash of vegetable oil. Then carefully crack one egg into each dish. This helps the eggs retain their shape as they cook.

Next, take a small bunch of vine tomatoes, drizzle them with vegetable oil, and season with salt and pepper. Then place them into a ceramic or silicone-lined dish.

Place both the eggs and the tomatoes into your air fryer basket. Then cook for 5 to 6 minutes. Depending on the size of your eggs and tomatoes, you may need to add an extra minute or two. Keep an eye on them for that perfect consistency.

While the eggs and tomatoes are cooking, slice a fresh avocado and toast your sourdough bread. You can toast the bread in a regular toaster or pop the slices into the air fryer drawer for the final 2 minutes of the cooking time for a golden, crisp finish.

Once everything is ready, it’s time to assemble. Spread the avocado over your warm toast, then gently spoon the poached eggs on top. Add the roasted vine tomatoes on the side, and finish with a drizzle of chilli oil, a sprinkle of sea salt, freshly ground black pepper, and a scattering of chopped parsley.

So this air fryer breakfast is the perfect blend of comfort and health. It’s quick, delicious, and elegant enough to feel like a treat. Even on a busy weekday morning.

Tips for Air Fryer Poached Eggs

Poached eggs might seem tricky, but with the air fryer, they’re surprisingly simple and hands-free. Here’s how to get soft, runny yolks with minimal effort and no swirling pans of boiling water.

1. Use small ramekins or silicone muffin cups
Choose heat-safe ramekins or silicone moulds that fit inside your air fryer basket. These help hold the shape of the egg as it cooks.

2. Add hot water to each cup
Before cracking in the egg, pour about 2 or 3 tablespoons of hot water into each ramekin. This helps create gentle steam, just like stovetop poaching.

3. Crack eggs carefully
Gently crack one egg into each ramekin. Be careful not to break the yolk as this helps achieve that perfect runny centre.

4. Preheat your air fryer
Set your air fryer to 160°C (320°F) and preheat for 2 or 3 minutes for consistent cooking from the start.

5. Keep cooking time short
Air fry the eggs at 160°C (320°F) for 5 to 6 minutes. Keep an eye on them from the 5-minute mark as air fryers can vary slightly.

6. Use tongs to remove carefully
The ramekins will be hot! Use tongs or oven mitts to lift them out safely once the whites are set and the yolks still jiggle slightly.

7. Drain before serving
Use a slotted spoon to lift out the eggs and gently blot with kitchen paper to remove any excess water.

8. Serve immediately
Poached eggs are best enjoyed right away, serve them on toast, with smashed avocado, or over a warm salad or bowl.
