PREP 10 minutes

COOK 15 minutes

KIT you will need an air fryer, mixing bowls and wooden skewers

Ingredients for air fryer fish & chips

100g plain flour

220ml (1/2 pint) of beer

2 fresh salmon filets (not frozen)

3 potatoes, peeled and sliced

Method

Let’s get started with prepping the chips. Take three medium-sized potatoes and cut them into thick, chunky chips – or thinner fries if that’s more your style. Place them into a large bowl of cold water and let them soak for at least an hour. This step is important as it helps to draw out the excess starch, which not only gives you a crispier chip but also prevents them from sticking together in the air fryer.

While the potatoes are soaking, it’s time to prepare the beer batter. In a mixing bowl, add 100g of plain flour. Gradually pour in half a pint of beer, whisking continuously by hand. It’s best to go slow with this step to ensure a smooth, lump-free batter. Once all the beer is incorporated, continue whisking for a few more minutes until the batter becomes thick and bubbly. The aeration is key to getting that lovely crispy texture on the salmon.

Now onto the salmon. Pat your two salmon fillets dry using a paper towel, then slice them into bite-sized chunks. Dip each piece into the beer batter, followed by a light coating of plain flour, and carefully thread two pieces onto each skewer. A quick tip – soak your wooden skewers in water for 30 minutes beforehand to prevent burning.

Drain and rinse your potatoes, pat them completely dry with kitchen roll, and place them in the air fryer basket in a single layer.

Cook both the skewered salmon and the chips in the air fryer at 190°C for about 15 minutes. Turn the skewers and give everything a spritz of olive oil halfway through cooking.

Once golden and crispy, serve your homemade fish and chips in paper cartons for that classic takeaway feel.

Tips for Air Fryer Fish and Chips

Mini fish and chips in the air fryer are a fun, quick, and healthier way to enjoy this classic comfort food. Whether you’re making it as a snack, party dish, or easy weeknight dinner, these tips will help you get perfectly crispy results every time – without the deep-fryer.

1. Choose the right fish
Go for firm white fish like cod, haddock, or pollock. Cut into small, even-sized chunks so they cook at the same rate and are easy to eat.

2. Pat the fish dry
Blot the fish pieces with kitchen paper before breading to remove excess moisture – this helps the coating stick and ensures crispiness.

3. Use panko for extra crunch
Dip the fish into flour, then egg, then panko breadcrumbs. Panko creates a light, golden crust that crisps beautifully in the air fryer.

4. Prep the chips right
Use mini potatoes or cut regular potatoes into small wedges or matchsticks. Soak in cold water for 20–30 minutes, then dry well before air frying – this removes excess starch and helps them crisp.

5. Cook chips first
Air fry the chips at 190°C (375°F) for about 15–20 minutes, shaking halfway through. Once they’re golden and crisp, keep them warm while you cook the fish.

6. Don’t overcrowd
Place fish pieces in a single layer with space in between. Overcrowding causes steaming instead of crisping – cook in batches if needed.

7. Spray lightly with oil
A light mist of oil helps both the chips and fish develop that golden crunch without deep frying.

8. Serve fresh and hot
Serve immediately with a wedge of lemon, tartare sauce, or ketchup. They’re best hot and crispy, straight from the basket!
