SERVES 2 people
KIT you will need an air fryer, toaster, kitchen roll and mixing bowls.
Ingredients for air fryer club sandwich
2 Chicken breasts
6 Rashers of bacon (mine was pre-cooked as I had it left over from the day before)
2 Large ripe tomatoes, sliced
4 Lettuce leaves, washed and sliced
2 Dollops of mayonnaise
6 Slices of white bread
2 Eggs
Method
So pat dry your chicken breasts. And place them directly in the drawer leaving the crisper plate in. You can use a silicone liner or disposable foil tray if you prefer to keep your air fryer clean. Then cook your chicken breasts on 190c for about 15 to 18 minutes, but depending on how big your chicken breasts are, they may take a little longer to cook.
As your chicken is cooking in the air fryer, wash and dry your lettuce and slice your tomatoes. When you have 8 minutes left on your chicken, turn the breasts over and pop your two eggs into the air fryer basket.
Then prepare a bowl of cold water and some ice, you will be popping your eggs in the water bath to cool, before you remove the hard shell. Once the eggs are cooked, carefully remove them from the air fryer and place them into the water for a few minutes. Remove the chicken breasts from the air fryer and leave them to rest on the side.
While the chicken is resting, pop your bread into the toaster and lightly toast them. Remove the shells from the eggs and place the eggs into a bowl. Season well with salt and pepper and add in about a tablespoon of mayonnaise. Stir with a fork until the egg has broken up a little. Slice your chicken breasts and start to build your club sandwich!
Spread the remaining mayonnaise over each slice of toast and start to stack. First with your sliced lettuce and tomato, then add on your chicken slices. Place on top another slice of toast, then spread with your egg mayonnaise and finally finish with your bacon.
Carefully cut your air fryer club sandwich in half and serve with potato wedges or chips.
Tips for Air Fryer Club Sandwich
1. Air Fry the Bacon First
Lay bacon in a single layer and cook at 190°C (375°F) for 6 to 8 minutes, depending on how crispy you like it. No flipping needed, just golden, even crunch.
2. Toast the Bread in the Air Fryer
Pop your slices in for 2–3 minutes at 188°C (370°F) to get that warm, slightly crispy base. This step keeps your sandwich from going soggy later.
3. Use Pre-Cooked or Leftover Chicken/Turkey
Thinly sliced roast chicken, rotisserie, or even air-fried breast works perfectly. You can warm it for 2–3 minutes in the air fryer if needed.
4. Layer for Stability and Flavour
Classic club structure:
Bottom layer: bread + mayo + lettuce + tomato
Middle: bread + chicken + cheese
Top: bread + crispy bacon
Press slightly to compact the layers before slicing.
5. Use Toothpicks to Secure Before Slicing
Hold everything together with cocktail sticks or toothpicks. Slice into quarters diagonally for that iconic look.
6. Cheese It Up Smartly
If adding cheese, place it near the warm chicken or bacon so it gets a little melty so no need to melt separately!
7. Air Fry Whole Sandwich Briefly (Optional)
Want a hot sandwich? Once assembled, air fry the whole thing for 2 – 3 minutes at 175°C (350°F) to warm through and lightly crisp the outside.
8. Customize with Extras
Add avocado, fried egg, or swap in grilled halloumi or turkey bacon. The air fryer makes it easy to adapt!
9. Use Good Bread
Go for thick cut white, whole grain, or sourdough as it holds up better in layers and crisps up nicely in the air fryer.
10. Serve with Crunch
Serve with air fryer chips, sweet potato fries, or a crisp side salad for a full café-style lunch at home.
