Air Fryer Chicken Fajitas

While I usually whip up my own fajita seasoning from scratch, there’s no shame in using a packet mix to save time. Especially when you’re juggling a busy schedule! If you’re a fan of heat, feel free to add extra chili to the seasoning for that spicy kick. These fajitas are low-carb and thanks to the magic of the air fryer, you don’t need to use any oil, keeping them low in fat as well.

KIT you will need an air fryer and a mixing bowl

Ingredients for Air Fryer Chicken Fajitas

2 chicken breasts, sliced into strips (beef or pork also work just as well)

A drizzle of vegetable oil

A Fajita seasoning mix (store bought or home made)

2 mixed peppers, de-seeded and sliced

1 brown onion, peeled and sliced

6 medium flour tortilla wraps

To serve:

Iceberg lettuce, washed and sliced

Sliced Jalapeno chilli peppers (if you like it spicy)

Grated cheeses

Sour cream

Fresh coriander, chopped

The juice of a lime

Method

Start by preparing your chicken breasts. Slice them into thin strips and place them into a large mixing bowl. Drizzle over a little olive oil to help the seasoning stick. Then sprinkle in your fajita seasoning. You can use a ready-made mix or your own blend of smoked paprika, cumin, garlic powder, and chilli powder for extra flavour. Mix everything together thoroughly using your hands or a spoon until all the chicken is evenly coated in the spices. For the best flavour, cover the bowl and let the chicken marinate in the fridge for at least an hour. If you have more time, marinating overnight will make the chicken even more tender and flavourful.

While the chicken is marinating, peel and thinly slice a large onion. Then de-seed and slice your bell peppers into thin strips. Use a mix of red, yellow, and green peppers for a colourful and tasty fajita filling. Once ready, add the sliced vegetables into the bowl with the chicken and give everything a good mix to ensure the flavours are evenly distributed.

Transfer the seasoned chicken and vegetables into your air fryer drawer. Leave the crisper plate in to allow for better airflow and even cooking. You can also use an ovenproof dish or air fryer liner if you want to keep clean-up easier. Cook everything at 200°C for around 15 minutes. Shaking the basket or stirring the contents twice during the cooking time.

While that’s cooking, warm your tortilla wraps in the microwave for 1–2 minutes until soft and pliable.

Serve your sizzling air fryer chicken fajitas with a selection of toppings like sour cream, grated cheese, sliced jalapeños, and crisp iceberg lettuce. Roll them up, tuck in the ends, and enjoy your delicious homemade fajitas straight from the air fryer!

Tips for Air Fryer Chicken Fajitas

1. Slice everything evenly
For even cooking, slice your chicken breasts and vegetables into similar-sized strips. This helps ensure the chicken cooks through while the peppers and onions stay slightly crisp and not overdone.

2. Use a marinade or spice rub
Even a quick 10-minute marinade with oil, lime juice, and fajita spices boosts flavour. Alternatively, toss everything in a generous fajita spice mix and olive oil just before cooking.

3. Preheat your air fryer
A quick 2–3 minute preheat at 190–200°C (375–390°F) helps give your chicken a nice sear and jump-starts the cooking process.

4. Don’t overcrowd the basket
Spread the chicken and vegetables in a single layer. If your air fryer is small, cook in two batches to avoid steaming the ingredients.

5. Shake or stir halfway through
Halfway through cooking, give everything a shake or stir to ensure even browning on all sides.

6. Check doneness with a thermometer
Make sure the chicken reaches an internal temperature of 75°C (165°F). This ensures it’s cooked through without drying out.

7. Serve straight from the fryer
For the best texture and flavour, serve your fajitas immediately with warm tortillas, salsa, guacamole, and your favourite toppings.

8. Great for meal prep
Air fryer chicken fajitas are perfect for batch cooking so just store cooled portions in the fridge for quick lunches or dinners during the week.
