Scampi is a popular seafood dish that is often served in pubs. But you may not realise that you can easily cook it in your own home from scratch using an air fryer. This recipe really is a game changer for seafood lovers. Learn how to treat yourself and your loved ones with this simple and tasty meal.

SERVES 2 people
KIT you will need an air fryer, food blender, paper towel, 3 mixing bowls and a hand whisk.
Ingredients for air fryer breaded scampi
100g of plain flour for the batter
220ml (1/2 pint) of cider
150g of king prawns (defrost before use if frozen)
100g of plain flour seasoned
100g of panko breadcrumbs
Sea salt and black pepper
To serve:
300g of frozen French fries
Store bought tartare sauce
Garden peas
Method
First put 100g of plain flour into a mixing bowl and then slowly add half a pint of cider whilst whisking by hand. Keep whisking the mixture until you have a thick batter. Then season your batter with sea salt and black pepper.
Next put your other 100g of flour into another bowl, so you have two separate bowls. Add your breadcrumbs to a mixer or blender and blend for about 5 seconds, you want them to be a finer consistency. Then add these to a separate bowl, so you have your three dipping bowls ready.
Add your frozen chips to the air fryer first and cook on 190c for five minutes until crispy. While the chips are cooking, pat your prawns dry using a paper towel.
Next dip each prawn into the plain flour first, then dip into the cider batter, then finally dip into the breadcrumbs. Making sure to coat each one thoroughly. Then place them directly into the air fryer drawer, leaving the crisper plate in. Cook the scampi on 190c for ten minutes, turning halfway, giving your chips a shake too, or until the prawns are golden.
Serve your air fried scampi and chips with tartare sauce and garden peas.
