All the flavour and crunch you’d expect, but with less oil, less fuss, and much less mess. It’s a lighter, easier way to enjoy this hearty favourite. Perfect for busy weeknights or lazy weekend dinners when you want something satisfying without having to deep-fry.

What I love most about this dish is its versatility. Ingredients for Air Fryer Pork Schnitzel

2 boneless pork loin chops (about 150–180g each)

Salt and pepper, to taste

2 tbsp plain flour

1 egg

4 tbsp breadcrumbs (preferably golden or panko-style for extra crunch)

½ tsp garlic powder (optional)

½ tsp sweet paprika (optional, for added flavour)

Cooking oil spray (e.g., olive or rapeseed)

2 tbs Cabbage slaw (Sauerkraut)

Method

Start by prepping your pork. Place each pork chop between two sheets of baking paper or cling film to prevent mess and splatter. Using a meat mallet or a rolling pin, gently pound the pork until it’s about 1 cm (½ inch) thick. This step ensures even cooking and helps tenderise the meat. Once flattened, season both sides of each chop generously with salt and freshly ground black pepper.

Next, set up a breadcrumbing station with three shallow bowls. In the first, add plain flour, this helps the egg stick to the pork. In the second, crack in the egg and beat it lightly with a fork until smooth. In the third bowl, mix your breadcrumbs with the garlic powder and paprika, if using. These spices add a subtle warmth and flavour to the crust, but you can keep it plain if you prefer.

Now coat each pork chop. First, dredge it in the flour, making sure both sides are lightly covered. Then shake off any excess. Dip into the beaten egg, allowing the excess to drip off, before pressing the pork firmly into the breadcrumb mixture. Make sure it’s well coated, and press the crumbs on so they adhere properly.

Preheat your air fryer to 200°C (390°F) for 2–3 minutes. Lightly spray both sides of the breaded chops with oil spray. This helps achieve that beautiful golden crunch. Place the chops in the basket in a single layer, without overlapping. You may need to cook in batches, depending on your air fryer size. Cook for 10–12 minutes, flipping halfway through, until the coating is crisp and golden and the internal temperature reaches 63°C (145°F).

Serve immediately with creamy mashed potatoes and tangy Sauerkraut for an authentic Polish touch!

Tips for Perfect Air Fryer Pork Schnitzel

Here’s some top tips to get the best result every time you cook schnitzel in your air-fryer.

1. Pound Evenly for Even Cooking
Flattening the pork to a consistent 1 cm thickness ensures it cooks evenly and quickly in the air fryer. If some areas are thicker than others, they may stay undercooked while the breadcrumbs over-brown. A rolling pin works just as well as a meat mallet.

2. Season Generously
Don’t be shy with the salt and pepper. Seasoning the pork before breading adds depth to the final flavour. You can also add a pinch of salt to the flour and breadcrumbs if you like things extra savoury.

3. Customise the Coating
While garlic powder and paprika add great flavour to the breadcrumb coating, feel free to experiment. Try dried herbs like thyme or oregano, or even a touch of grated Parmesan for extra crunch and richness.

4. Use Panko for Extra Crunch
If you prefer a super crisp schnitzel, swap standard breadcrumbs for panko. These Japanese-style breadcrumbs create a lighter, crunchier texture that works brilliantly in the air fryer.

5. Don’t Crowd the Basket
Cook in batches if needed. Overcrowding the air fryer can result in uneven cooking and soggy crumbs. Give the pork space so the hot air can circulate and crisp up the coating evenly.

6. Flip for Even Browning
Flipping the schnitzel halfway through the cook ensures both sides come out golden and crunchy. A quick spritz of oil on the second side helps enhance the colour and texture.

7. Rest Briefly Before Serving
Let the schnitzel rest for a minute or two before serving. This helps the juices settle and keeps the pork tender.
