Air fried mini cookies

These air fried mini cookies are just what you need to get you through school holidays.

Small enough that you won’t feel guilty about the kids eating a couple, but gooey and sweet enough that they will feel they have had a lovely treat. They also go wonderfully well with a cup of tea, so you can settle down with a cuppa, a good book and two or three air fried cookie bites, after the kids have gone to bed for a real indulgent little treat.

The aroma of these air fried mini cookie bites baking in the air fryer fills the kitchen with the comforting scent of melted chocolate and warm, buttery dough, creating an inviting atmosphere that is hard to resist. The golden brown exterior gives way to a soft and chewy centre, where the chocolate chips remain delightfully gooey. These mini cookie bites strike the perfect balance between crispy edges and a tender middle, making each bite a joy.

These are great to get the children involved too! They are easy but fun to make and the kids can literally get hands on with making these, helping to mix the ingredients but then diving right in to mould the dough into balls ready to pop into the air fryer. After just 12 minutes in the air fryer these cookie bites are warm, gooey and packed with melty chocolate chips, the perfect quick sweet snack.

Essential kit

You will need: an air fryer, and a large silicone mould or baking paper.

Ingredients

150g of salted butter, softened
80g of light brown muscovado sugar
80g of granulated sugar
1 large egg
225g of plain flour
1/2 teaspoon of bicarbonate of soda (baking soda)
200g of plain chocolate chips or chunks

Method

In a large mixing bowl, mix together the butter, muscovado sugar, granulated sugar, egg, plain flour and bicarbonate of soda to make a firm dough. Add the chocolate chips or chunks and beat again until well incorporated.

Then using your hands, shape the mix into small balls about the size of a golf ball. If you don’t want to cook all the cookies now, transfer a portion to the freezer to cook at a later date.

Next pop them into the air fryer drawer on grease proof paper spacing them out so they have room to spread.

Cook on 180c for 12 minutes or until cooked throughout.

Leave your air fried mini cookies to cool slightly, then serve still slightly warm or cooled. The slight cooling allows the cookies to set, making them easier to handle and enhancing their chewy texture. Enjoy these delightful treats with a glass of milk or your favourite hot beverage. The perfect little snack to satisfy your sweet tooth.
