Air Fryer Stuffed Tomato

So this recipe is incredibly adaptable to different dietary preferences. To make it vegan, simply ensure that the vegetable stock is plant-based and skip the cheese. So If you’re looking for a gluten-free option, swap the couscous for quinoa or rice, and use gluten-free breadcrumbs.

Ingredients for air fryer stuffed tomato

1 beef tomato

1 cup of cous cous

Vegetable stock

1/2 an onion, peeled and sliced

1/2 a pepper

1/4 courgette

Panko bread crumbs

Method

To start making these delicious air fryer stuffed tomatoes, I first cut the top off a large beef tomato and carefully scooped out the insides. Making sure to save the flesh for later use in a pasta sauce. This method not only makes for a tasty dish but also helps reduce food waste. So once the tomatoes were prepped, I soaked a cup of couscous in vegetable stock. Allowing it to absorb all the rich flavours.

Next, I used some leftover vegetables from my fridge to create the filling. Then I sautéed half an onion, half a pepper, and a quarter courgette. Such a great way to use up those bits and bobs that might otherwise go to waste. Then I seasoned the veggies with a sprinkle of paprika, garlic powder, salt, and pepper to enhance the flavour. Once the vegetables were cooked through, I mixed them with the couscous, ensuring everything was well combined.

I then stuffed the tomato with this flavourful couscous and veggie mixture, pressing it in gently to make sure it was packed nicely. For an extra crispy finish, I sprinkled a little panko breadcrumbs on top of each stuffed tomato, adding texture and crunch. Then I placed the stuffed tomatoes on a piece of baking parchment and transferred them to my air fryer, setting it to 180°C for around 10 minutes. Be sure to keep an eye on them, as cooking times may vary depending on your air fryer model.

So once the tomatoes were cooked, I removed them from the air-fryer. To serve, I placed them on a plate alongside a fresh green salad and scattered a handful of pine nuts for a lovely nutty finish. These air fryer stuffed tomatoes are a perfect light lunch or side dish, packed with flavour and nutrients!

Tips for Air Fryer Stuffed Tomato

1. Choose the Right Tomatoes:
Opt for firm, medium to large tomatoes like Roma or beefsteak. They should be ripe but not overly soft to hold the stuffing well without collapsing.

2. Prepare Tomatoes Properly:
Slice off the top and carefully scoop out the seeds and pulp. Leaving a little flesh inside helps keep the tomato sturdy while providing flavour.

3. Use a Flavourful Stuffing:
Fill your tomatoes with a mix of ingredients like cooked rice, quinoa, herbs, garlic, cheese, and sautéed veggies or minced meat. The stuffing should be moist but not too wet to avoid soggy tomatoes.

4. Season Well:
Don’t forget to season both the inside of the tomatoes and the stuffing generously with salt, pepper, and herbs like basil, oregano, or thyme to enhance the taste.

5. Preheat Your Air Fryer:
Preheat to around 180°C (356°F) for 2 or 3 minutes. This ensures even cooking and helps the tomatoes start roasting immediately.

6. Use a Baking Dish or Silicone Cups:
If your air fryer basket has large holes, place the stuffed tomatoes in a small baking dish or silicone muffin cups to prevent them from tipping over.

7. Cook Time and Temperature:
Air fry at 180°C (356°F) for about 12 to 15 minutes. Cooking times can vary depending on tomato size and stuffing, so check for tender but intact tomatoes.

8. Add Cheese at the End:
If you like a cheesy topping, sprinkle grated cheese on the tomatoes during the last 2–3 minutes for a melted, golden crust.

9. Let Them Rest:
Allow the stuffed tomatoes to cool slightly before serving. This helps the filling set and prevents burns.

10. Serve with Fresh Herbs:
Garnish with fresh parsley, basil, or a drizzle of balsamic glaze for an added burst of flavour and a pretty presentation.
