Air Fryer Stuffed Courgettes

These air fryer stuffed courgettes, with grated mozzarella & sundried tomatoes make an a healthy bite-sized vegetarian snack. Courgettes are low in calories, high in antioxidants and full of fibre. I find the smaller courgettes with darker skin tend to have more flavour and nutrients.

KIT you will need an air fryer and paper towel.

Ingredients for air fryer stuffed courgettes

Courgettes

Sun dried tomatoes

Mozzarella

Gem Lettuce

Olive oil or a light vegetable oil spray

Method

Slice the courgettes in half and then cut them in half length ways.

Then pat the courgettes dry with a paper towel to remove any excess moisture.

Next scoop out the middle seeded portion to create hollowed out boats ready for filling.

I saved the inside for a courgette soup I will be making later.

Then I chopped the sun dried tomatoes and grated the mozzarella and popped them in the courgette boats.

Finally I sprayed them with a little vegetable oil and popped them in the air fryer drawer.

Cook for around 8 minutes on 180c, checking half way through.

I served my air fried stuffed courgettes with little gem lettuce and extra chilli with a drizzle of olive oil.

Serving these stuffed courgettes with gem lettuce and a drizzle of olive oil adds a refreshing crunch and an extra layer of flavour. The lettuce acts as a perfect palate cleanser, balancing the richness of the cheese and the robust flavour of the sundried tomatoes.
