KIT you will need an air fryer and a mixing bowl.
Ingredients for air fryer sausage stew
8 large pork sausages
2 brown onions, peeled and thickly sliced
3 mixed peppers, de-seeded and cut into chunks
1 tablespoon of olive oil
300ml of prepared instant gravy
1 beef jelly stock pot
2 tablespoons of tomato puree
1 tablespoon of Worcestershire sauce
2 x 400g tins of mixed beans in water
1 teaspoon of dried sage
Sea salt and freshly ground black pepper
To serve:
Crusty bread
A dollop of English mustard
Method
So start by preparing your ingredients. Cut each sausage into five even pieces and place them in a large mixing bowl. Peel and slice your onions and peppers – choose a mix of red, yellow, or green for a colourful dish. And add them to the bowl with the sausages. Drizzle over a tablespoon of olive oil and mix everything together well so the sausages and vegetables are evenly coated.
Next, tip the mixture into your air fryer drawer. For this air fryer sausage stew, set the temperature to 190°C and cook for around 10 to 15 minutes, or until the sausages are nicely browned and the vegetables begin to soften and caramelise slightly.
While the sausages and vegetables are cooking, prepare your gravy. Mix it up according to the packet instructions, then stir in a stock pot, a tablespoon of tomato purée, and a dash of Worcestershire sauce. Whisk everything together until smooth.
So once the sausages and vegetables are browned, carefully remove the crisper plate from the air fryer using tongs. This makes room for the sauce. Pour the prepared gravy into the basket, then add in two tins of mixed beans, including the liquid. This adds richness and body to the stew. Sprinkle in a pinch of dried sage, season with salt and pepper to taste, and stir everything together well.
Return the basket to the air fryer and cook for a further 10 to 15 minutes at 190°C, stirring once or twice. If the sauce gets too thick, just add a splash of hot water from the kettle.
Serve your hearty sausage stew with warm, crusty bread and a generous dollop of English mustard. It’s the perfect comforting meal for a chilly day!
Tips for Air Fryer Sausage Stew
1. Brown the sausages first
To maximise flavour, brown your sausages in the air fryer before adding them to the stew mix. This helps them hold their shape and adds a rich, caramelised taste.
2. Use partially cooked or pre-cooked ingredients
Since air fryers aren’t deep pots, it helps to pre-soften veg like carrots or potatoes in the microwave or steam them slightly before combining. This ensures they cook through evenly and don’t stay crunchy.
3. Choose the right dish
Use an air fryer-safe baking dish or tray to contain the stew mixture. A deep dish works best for holding sauce and ingredients without spilling during cooking.
4. Don’t overfill
Leave space at the top of your dish so hot air can circulate. Overfilling can lead to uneven cooking or spillage during air frying.
5. Add liquid in moderation
You’ll need less liquid than in a stovetop stew. Add just enough stock or sauce to coat the ingredients as too much can cause splashing or won’t reduce properly in the air fryer.
6. Stir halfway through
If your dish allows, give the stew a stir halfway through cooking to make sure everything heats evenly and the sauce doesn’t thicken too much in spots.
7. Adjust cooking time based on ingredients
Chunky veg and raw sausages may take longer, while softer vegetables or cooked sausages will need less time. Keep an eye and test for doneness.
8. Finish with fresh herbs
Once cooked, stir through some fresh parsley or thyme before serving for a vibrant lift of flavour.
