Ingredients for Air Fryer Sausage Rolls

500g of puff pastry

400g of sausage meat

X1 egg beaten

1 tsp of dried rosemary

Seasoning

Spray oil

Method

So start by preparing your puff pastry. If you are using pre-rolled pastry, simply unroll it onto a lightly floured surface. If you are using a block of puff pastry, open the pack and use a rolling pin to roll it out evenly to about 1cm thickness. Make sure the edges are smooth and the thickness is consistent throughout – this helps with even cooking.

Next, place your sausage meat into a large mixing bowl. Season with a pinch of salt and pepper, and feel free to get creative here – add herbs, garlic powder, or even a spoonful of mustard for extra flavour. Once seasoned, divide the sausage meat into two equal portions. Shape each into long, even logs and place them lengthwise down the centre of each pastry strip. If you like, sprinkle some dried rosemary on top of the meat for a subtle, aromatic touch.

Then carefully fold the pastry over the sausage filling, pressing the edges together to seal well. You can crimp the edges with a fork for a decorative finish. Slice into your preferred sizes – bite-sized for party snacks or larger for a more filling meal. Brush the tops with a beaten egg to give that gorgeous golden shine, and gently score the tops with a fork to help steam escape and seal in the juices.

Preheat your air fryer to 190°C for 2-3 minutes. Line the basket with parchment paper or lightly spray it with oil to prevent sticking. Place the rolls in, leaving some space between them. Air fry for 10-12 minutes or until golden, puffed, and cooked through.

Tips for Air Fryer Sausage Rolls

1. Use pre-rolled puff pastry for ease
You can save yourself so much time by using ready-rolled puff pastry as it is perfectly even and ideal for wrapping around sausages or filling.

2. Keep the pastry cold
Work quickly with the pastry and keep it chilled until just before cooking. Warm pastry can get sticky and won’t puff as nicely in the air fryer.

3. Don’t overfill
Whether you are using sausage meat or whole sausages, avoid overfilling. Too much filling can lead to leaks or undercooked centres. Leave room to seal the edges.

4. Seal the edges well
Use a little water or egg wash to seal the edge of the pastry where it joins. Press with a fork to crimp and secure for that classic bakery look.

5. Score the tops
Lightly scoring the tops of your sausage rolls (diagonally or with small slits) will help the steam to escape and gives a beautiful finish.

6. Use egg wash for colour
Brush your sausage rolls with a beaten egg wash before cooking to get that golden, shiny crust. Without it, the rolls can look pale even when fully cooked.

7. Don’t overcrowd the basket
Cook in batches if needed. And give each sausage roll enough space so that hot air can circulate around them for an even, crispy bake.

8. Flip for even cooking
About halfway through cooking, remember to flip each sausage roll over gently to ensure the bottoms get crisp too.

9. Rest before eating
Your air fryer sausage rolls will be piping hot inside. So let them rest for 2 or 3 minutes before serving to avoid any burns and allow the filling to settle.
