Air Fryer Salmon Pieces

This air fryer salmon pieces with courgette fries is the perfect dish to bring you a touch of summer at any time of the year. This dish is light but flavoursome and gives you a great healthy alternative to chips by using courgette to create your fries. Served with a light salad this dish will leave you feeling satisfied but without that feeling of bloat that we can so often experience.

I cooked these air fryer salmon pieces with courgette fries recipe with Alexis Conran on the Channel 5 TV show “Air Fryers: An Easy Way to Lose Weight” first aired on 28 February 2024. COOK 10 to 15 minutes

SERVES 2 people

KIT you will need: an air fryer and a large mixing bowl.

Ingredients for air fryer salmon pieces

4 salmon pieces

2 tablespoons of red or green pesto

2 sliced lemon for the base

For the fries:

3 courgettes

1 teaspoon of paprika

Seasoning

Vegetable spray oil

Side salad:

Spinach

Tomatoes

Pecan nuts

Extra lemon to serve

For the dip:

6 table spoons of Greek yogurt

Handful of chopped fresh mint

Squeeze of lemon

Method

So first of all slice your courgette into large fries, about the size of your finger and set aside.

Then place your courgettes into a bowl, spray with a little oil, season, and sprinkle over your paprika.

So on the top of each piece of salmon spread over your pesto. Slice your lemon into discs and put them into your air fryer drawer then place the salmon pieces on top. Scatter around your fries.

Then set your air fryer to 185c and cook all together for 10 to 15 minutes, turning the fries halfway.

While the salmon and fries are cooking, prepare your dip by popping the yogurt into a bowl, adding in the chopped mint, squeeze half a lemon, season with salt and pepper and stir. Rinse your salad and pop into a large bowl, slice your beef tomatoes and place on top, scatter over your crushed nuts to serve.

Once the air fryer salmon pieces are cooked, serve with your courgette fries, dip and your side salad. Enjoy!
