There is no need to turn on your oven for this easy air fryer roast gammon recipe. Making it the perfect option for a quick and delicious meal. Especially when you want to save time or avoid heating up the whole kitchen. Most air fryers, even the smaller models, can easily accommodate a large gammon joint. But it is always a good idea to check that it fits comfortably in your air fryer basket. It is important to leave some space around the meat to ensure that the hot air can circulate properly and cook the gammon evenly. The air fryer’s rapid air circulation is key to achieving a perfectly cooked roast gammon. With a perfectly crispy exterior and tender, juicy interior.
Cooking gammon in the air fryer is not only quicker but also more convenient than the traditional oven method. You can expect a roast with the same great texture and flavour, but in a fraction of the time. This makes it an ideal option for busy weekdays. Or when you want to prepare a delicious meal without the long wait of oven roasting. The air fryer also helps lock in moisture. Keeping the gammon juicy and flavourful while reducing any unnecessary grease or fat.
This recipe is especially great for a festive feast, whether you are preparing it for Christmas, Easter, or a Sunday dinner with the family. The addition of a sweet honey glaze will complement the savoury flavour of the gammon beautifully. Adding a touch of sweetness and depth. It is an easy, affordable way to enjoy a traditional roast ham dinner with minimal effort and maximum flavour.

KIT you will need an air fryer, tin foil, a mixing bowl and a meat thermometer (optional)
Ingredients for air fryer roast gammon
A 900g ham joint
2 tablespoons of Dijon mustard
2 tablespoons of runny honey
Method
To get the best results, remember to take your gammon joint out of the fridge about 30 minutes before cooking. Allowing it to come closer to room temperature helps it cook more evenly throughout. While the gammon is resting, prepare a simple but delicious glaze by combining two tablespoons of Dijon mustard with two tablespoons of runny honey in a mixing bowl. Stir until smooth and well combined – this sweet and tangy mixture will add a beautiful flavour and a lovely golden finish to the meat.
Next, brush a generous amount of the honey and mustard glaze all over the gammon joint, making sure it’s evenly coated. Keep some of the glaze aside for later, as you’ll be brushing it on during the cooking process to build layers of flavour.
Wrap the glazed gammon tightly in tin foil and place it into your air fryer basket. Make sure the crisper plates are still in the basket, as they’ll help circulate the hot air for even cooking. Set your air fryer to 160°C and cook for 30 minutes.
After the first 30 minutes, carefully open the drawer and brush the joint again with the remaining honey mustard glaze. Continue cooking for another 30 minutes, or until the outside is golden brown and the internal temperature of the meat reaches 70–75°C. For the last five minutes, remove the foil to allow the surface to crisp up and caramelise slightly.
Once done, take the gammon out of the air fryer and let it rest for 10 – 15 minutes before slicing. Resting helps retain the juices and makes for a more tender bite.
I like to serve my roast gammon with thick, chunky chips and a perfectly fried egg for a comforting and hearty meal.
Tips for Air Fryer Roast Gammon
1. Choose a boneless gammon joint
For easy cooking and even browning, opt for a boneless gammon joint. If you’re using a bone-in gammon, make sure it fits comfortably in your air fryer basket.
2. Score the fat
Before cooking, score the fat in a crisscross pattern with a sharp knife. This helps the fat render down and ensures a crispy, golden exterior.
3. Glaze for extra flavour
For a delicious, glossy finish, glaze your gammon with a mixture of honey, brown sugar, mustard, or even marmalade. Apply the glaze during the last 10 minutes of cooking for the best results.
4. Preheat the air fryer
It is a good idea to preheat your air fryer to 180°C (350°F) for about 3 minutes. This ensures the gammon starts cooking immediately, giving it a crisp exterior.
5. Roast the gammon fat-side up
Place the gammon in the air fryer basket fat-side up. This allows the fat to crisp up nicely and helps keep the meat moist and tender.
6. Cook at a lower temperature for tenderness
Roast the gammon for 30 to 40 minutes at 180°C (350°F), depending on the size. The cooking time can vary based on the thickness of the gammon joint.
7. Use a meat thermometer
Check the internal temperature of the gammon with a meat thermometer. The ideal temperature for a fully cooked gammon is 75°C (165°F).
8. Rest before carving
Let the gammon joint rest for about 10 minutes before carving. This will allow the juices to redistribute, ensuring tender and juicy slices.
9. Serve with your favourite sides
Pair your juicy roast gammon with mashed potatoes, roasted vegetables, or a fresh salad for a well-rounded meal.
