PREP 5 minutes
COOK 10-15 minutes
SERVES 2 people
KIT you will need an air fryer
Ingredients for air fryer pork noodles
500g of Pork mince
275g of fresh egg noodles
Stir fry sauce of your choice (we love a sweet chilli sauce)
150g of mixed frozen vegetables (carrots, peas and sweetcorn)
Seasoning
To serve:
Fresh red chilli, de-seeded and sliced
Fresh coriander
Soy sauce (optional)
Prawn crackers (optional)
Method
Start by removing the crisper plates from your air fryer drawer so you can cook everything evenly without any obstruction. Place your pork mince directly into the drawer, breaking it up as much as possible with a wooden spoon or spatula. Then set the air fryer to 190°C and cook the mince for around 5 to 7 minutes. Be sure to stir a couple of times during cooking to break up any clumps and allow the meat to brown evenly.
Once the pork mince begins to brown and is nearly cooked through, add your frozen mixed vegetables to the drawer. Then pour in half of your favourite store-bought stir fry sauce – hoisin, teriyaki, or sweet chilli all work well. Give everything a really good stir to coat the vegetables and mince in the sauce. Return the drawer to the air fryer and cook for a further 3 to 5 minutes at 190°C, or until the vegetables start to soften and cook through.
Now it’s time to add your fresh stir fry noodles along with the rest of the sauce. Break the noodles apart as much as possible before adding them, or gently separate them with your fingers. Stir everything together thoroughly to coat all the noodles in the sauce. Cook for a final 3 to 5 minutes, or until the noodles are soft, slightly sticky, and caramelised around the edges.
Then serve your pork stir fry hot, topped with fresh coriander leaves, thinly sliced red chilli, a splash of soy sauce, and some crunchy prawn crackers on the side for that perfect takeaway-style finish – right from your air fryer!
Tips for Air Fryer Pork Noodles
1. Use tender cuts of pork
For the best texture, use pork tenderloin, belly, or loin. These stay juicy and cook evenly in the air fryer.
2. Marinate the pork
For extra flavour, marinate your pork slices in soy sauce, garlic, ginger, and honey for 30 minutes before cooking.
3. Preheat your air fryer
Preheat to 200°C for 3 minutes to ensure that the pork and noodles cook evenly and quickly.
4. Cook pork separately from noodles
Air fry the pork separately from the noodles. This ensures that both the meat and the noodles cook to perfection without overcrowding the basket.
5. Choose the right noodles
Use your favourite noodles, whether they’re egg noodles, rice noodles, or soba. If using dried noodles, cook them according to the package instructions before adding them to your air fryer to finish off the dish.
6. Add vegetables for extra crunch
Add some vegetables like bell peppers, carrots, or cabbage to the pork while air frying, or toss them in with the noodles towards the end. This adds both texture and nutrition to your dish.
7. Avoid soggy noodles
When adding the cooked noodles to the air fryer, toss them with a little oil or sauce to avoid them getting too dry or sticking together. A quick spray of oil can also help them crisp up.
8. Mix everything together
Once your pork and noodles are cooked, toss them together in a bowl, adding extra seasonings or sauce to taste. You can use soy sauce, sesame oil, or even a bit of chili paste for an extra kick.
9. Serve immediately
Serve your delicious pork noodles hot, garnished with fresh herbs like cilantro, sesame seeds, or green onions.
10. Get creative
Add your favourite toppings, like crushed peanuts, pickled vegetables, or a fried egg!
