Ingredients for Air Fryer Loaded Sweet Potato
2 sweet potatoes, washed
2 tbs of Greek yogurt
1 tbs of runny honey
4 slices of streaky bacon
A handful of pecans
Method
To prepare this delicious Air Fried Loaded Sweet Potato, start by washing and scrubbing your sweet potato thoroughly under running water to remove any dirt. Then pat dry with kitchen roll or a clean towel. For a bit of extra insurance against bursting and to help release steam during cooking, you can prick the potato a few times with a fork. Though this step is optional.
Next, lightly rub the sweet potato with a small amount of oil and sprinkle a pinch of salt over the skin. This step helps achieve a wonderfully crisp exterior while enhancing flavour. Then place the prepared sweet potato in your air fryer leaving the crisper plate in. Cook at 190°C (about 375°F) for 35 to 45 minutes. The exact time will vary depending on the size of the potato, so keep an eye on it. Smaller potatoes may need a bit less time, and larger ones may require more. Flip the potato halfway through to ensure even cooking. You’ll know it’s done when it’s fork-tender all the way through and has caramelized, golden spots on the surface.
So once cooked, remove the sweet potato from the air-fryer and set it aside. Next, place your streaky bacon into the air fryer basket and cook at 200°C (about 400°F) for 5 minutes. Flip halfway through until it’s crispy and golden.
Now it’s time to assemble. Carefully slice open your sweet potato, fluff the insides gently with a fork, and top it with a generous spoonful of creamy Greek yogurt. Then drizzle over golden honey, crumble the crispy bacon over the top, and finish with a sprinkle of crushed pecans. The result is a beautifully balanced dish that’s sweet, salty, creamy, and crunchy. Perfect for any time of day. Enjoy immediately for the best texture and flavour!
Tips for Air Fryer Loaded Sweet Potatoes
1. Choose evenly sized sweet potatoes
So select medium-sized sweet potatoes that are all similar in size so that they cook evenly. Avoid oversized ones, which take longer and may not cook through properly in the air fryer.
2. Pierce the skin
Use a fork to poke holes in the sweet potatoes before air frying as this allows the steam to escape and helps to prevent them from bursting as they cook.
3. Lightly oil the skin
Rub the outside of each sweet potato with a little olive oil and sprinkle with salt before cooking. This gives the skin a crisp, seasoned finish you’ll want to eat too!
4. Cook at the right temp
Set your air fryer to 190°C (375°F) and cook for 35 to 45 minutes, depending on the size of your potatoes. Remember to flip halfway through cooking for an even bake.
5. Check doneness with a knife
Insert a sharp knife or skewer – it should glide in easily when the sweet potato is fully cooked and fluffy inside.
6. Let them rest a few minutes
After air frying, let the sweet potatoes sit for between 3 and 5 minutes. So this helps them steam inside and makes them easier to handle when slicing and stuffing.
7. Load creatively!
Top your sweet potatoes with anything from black beans, avocado and salsa for a Tex-Mex twist, to bacon, cheese and sour cream for classic comfort. You can also go sweet with nut butter and cinnamon!
8. Serve immediately
Loaded sweet potatoes are best served hot, so that your topping will melt and meld perfectly into the fluffy centre.
