Ingredients for Air Fryer Lamb Steaks
2 lamb leg steaks or lamb rump steaks
1 tbsp olive oil
1 tsp dried oregano
One garlic clove, minced
Zest of ½ lemon
Juice of ½ lemon
Salt and black pepper, to taste
For the Greek Salad:
½ cucumber, halved lengthways and sliced
2 medium ripe tomatoes, cut into wedges
½ red onion, thinly sliced
A handful of Kalamata olives
50g feta cheese, crumbled
1 tbsp extra virgin olive oil
½ tbsp red wine vinegar
Pinch of dried oregano
Salt and pepper, to taste
Method
So start by preparing the marinade. In a small bowl, mix the olive oil, dried oregano, minced garlic, lemon zest, lemon juice, salt, and pepper. Place the lamb steaks on a plate or in a shallow dish, then pour over the marinade. Use your hands or a spoon to ensure the lamb is evenly coated on both sides. For the best flavour, cover and refrigerate for at least 30 minutes, but even a quick 10-minute marination while you prepare the salad will make a big difference.
