KIT you will need an air fryer and a large mixing bowl.
Ingredients for Air Fryer Halloumi
1 Medium sized sweet potato, peeled and chopped
125g of halloumi cheese, sliced
180g of fresh Asparagus
1 Red pepper, de-seeded and thinly sliced
A Handful of fresh spinach leaves, washed
1 teaspoon of Paprika
Olive oil spray
To serve:
2 tablespoon of Runny honey
1 teaspoon of dried Chilli flakes
Method
Start by peeling your sweet potatoes and chopping them into small, evenly sized cubes. This helps them cook quickly and evenly in the air fryer. Place the chopped sweet potato into a mixing bowl, spray lightly with olive oil, and toss to coat. Then sprinkle over smoked paprika (or regular paprika if you prefer) and mix well, ensuring each piece is thoroughly coated in the seasoning. Set the bowl aside while you prepare the rest of the ingredients.
Next, slice your halloumi cheese lengthways into even strips, each around a centimetre thick. Lightly spray both sides with oil to help it crisp up during cooking. Add both the sweet potatoes and the halloumi directly into your air fryer basket, keeping the crisper trays in for that perfect texture. Set your air fryer to 190°C and cook for about 5 to 6 minutes, or until the halloumi starts to turn golden at the edges and the sweet potatoes begin to crisp.
While that’s cooking, de-seed a red pepper and slice it into long strips. After the initial 5 minutes of cooking, open the air fryer, add the sliced red peppers, flip the halloumi slices over, and give the sweet potatoes a shake to ensure even cooking. Continue cooking for another 3 to 4 minutes.
Now add your asparagus spears to the basket and cook everything for a final 3 to 4 minutes, or until the asparagus is tender, the potatoes are golden and crispy, and the halloumi is beautifully browned.
While everything finishes cooking, quickly stir together runny honey and dried chilli flakes in a small bowl. Once everything is ready, serve the warm halloumi and vegetables over a bed of fresh spinach. Drizzle the sweet chilli honey dressing over the top and enjoy this vibrant, healthy lunch while still warm!
Tips for Air Fryer Halloumi
1. Use a firm block of halloumi
Start with a plain, unflavoured block of halloumi rather than pre-sliced or marinated varieties. This gives you full control over thickness and shape. Cut the cheese into even-sized slices or sticks (about 1 cm thick is ideal) for consistent cooking.
2. Pat it dry
Halloumi is typically packed in brine, so it’s important to blot it thoroughly with kitchen paper before cooking. Removing the excess moisture helps the cheese crisp up nicely in the air fryer, rather than steaming.
3. Light oil = golden crust
A light brush or spray of olive oil helps the cheese develop a lovely golden exterior without sticking.
4. Don’t overcrowd
Place the halloumi in a single layer with space between each piece to allow hot air to circulate and crisp all sides evenly.
5. No preheating needed (usually!)
Halloumi crisps quickly without needing to preheat the air fryer, but if yours typically sticks, a quick preheat to 200°C (390°F) helps.
6. Shake or turn halfway
Flip or shake the halloumi halfway through cooking to ensure even browning and prevent sticking.
7. Keep an eye on timing
Air fry at 200°C (390°F) for 7 to 9 minutes, depending on thickness. Halloumi can go from golden to overdone fast!
8. Serve immediately
Halloumi is best enjoyed hot and fresh – crispy on the outside, soft and squeaky inside. It can toughen if left to cool too long.
9. Pair it well
Serve with a drizzle of honey, a squeeze of lemon, or as part of a mezze platter, salad, or wrap.
