I started by thinly slicing the courgette lengthways using a sharp knife, aiming for long, even strips that are flexible enough to roll but still sturdy. Once sliced, I laid the courgette ribbons onto a plate and gently pressed them with kitchen roll to remove any excess moisture. This step helps them crisp up better in the air fryer. Then, I gave them a light spray with vegetable oil and sprinkled over a little garlic salt for a subtle savoury kick.
For the filling, I used preserved peppers. As they have a lovely natural sweetness that contrasts beautifully with the mild courgette. And their soft texture makes them perfect for rolling. So I placed a strip of pepper on each courgette slice, then carefully rolled them up into neat little spirals.
Then once rolled, I gently threaded the stuffed courgette rolls onto wooden skewers. These not only help keep the rolls intact during cooking but also make for an attractive presentation. 2. Cut Evenly Sized Pieces:
Slice your courgette into uniform chunks or thick slices so they cook evenly on the skewers. Aim for pieces about 1 to 1.5 inches thick.
3. Soak Wooden Skewers:
If you are using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning in the air fryer.
4. Marinate for Flavour:
Toss the courgette pieces in olive oil, garlic, lemon juice, herbs (like oregano, thyme, or parsley), salt, and pepper before cooking. Marinating for 15 to –30 minutes adds depth and juiciness.
5. Add Other Veggies or Protein:
Balance your kebabs by adding bell peppers, cherry tomatoes, mushrooms, or halloumi cubes. These cook well alongside courgettes in the air fryer.
6. Preheat the Air Fryer:
If you have enough time then preheat your air fryer to 180°C (356°F) for about 3 minutes. This will help the kebabs to start cooking evenly right away.
7. Don’t Overcrowd the Basket:
Arrange skewers in a single layer with space between to allow hot air circulation, ensuring even cooking and browning.
8. Flip or Rotate:
Turn the kebabs halfway through cooking (around 7 or 8 minutes) to ensure all sides are nicely browned and tender.
9. Cooking Time:
Courgette kebabs usually take 12 to 15 minutes at 180°C, depending on the size of your pieces and the air fryer model.
9. Serve Fresh and Hot:
Serve your kebabs immediately with a squeeze of fresh lemon juice or a dollop of tzatziki for a refreshing finish.
