Ingredients for air fryer chicken skewers
1 chicken breast, sliced
100g of chorizo
1 red onion, peeled and roughly chopped
Cherry tomatoes
Iceberg lettuce
Vegetable oil spray
Method
To begin, I sliced the chicken breast into small, bite-sized chunks – perfect for quick, even cooking in the air fryer. I did the same with the chorizo and red onions. Keep the pieces fairly uniform in size so they would cook at the same rate. The cherry tomatoes were left whole to provide a juicy burst of flavour once cooked.
I then threaded the chicken, chorizo, onion, and cherry tomatoes onto wooden skewers, which I had soaked in water for about 30 minutes before to stop them burning in the air fryer. This little trick helps prevent the skewers from burning or catching in the air fryer. Once assembled, I gave them a light spray with olive oil to encourage a lovely, golden finish while cooking.
The air fryer was preheated to 180°C. I arranged the skewers in a single layer in the drawer, making sure they weren’t overcrowded so the hot air could circulate freely. They cooked for 20 to 25 minutes, and I flipped them halfway through to ensure both sides got beautifully crispy and evenly cooked. As always, it’s important to check that the chicken is fully cooked through – juices should run clear, and there should be no pink in the centre.
Once done, I carefully removed the skewers from the air fryer and served them nestled in fresh iceberg lettuce boats. These added a refreshing crunch and made for a fun, mess-free way to enjoy the skewers. On the side, I added mini air-fried corn on the cob – lightly charred and naturally sweet.

Tips for Air Fryer Chicken Skewers
1. Choose the Right Cut
Boneless, skinless chicken thighs are perfect as they stay juicy and are less likely to dry out. Chicken breast also works, but marinate well to keep it moist.
2. Cut Evenly
Slice chicken into equal-sized chunks (about 2.5cm or 1 inch). This ensures all the pieces cook evenly at the same time.
3. Marinate for Flavour
Marinate your chicken for at least 30 minutes, or up to overnight. Try options like garlic and lemon, yogurt and spices, or soy sauce with honey and ginger for an Asian twist.
4. Soak Wooden Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning in the air fryer.
5. Preheat Your Air Fryer
Set your air fryer to 190°C (375°F) and let it heat up for 2 or 3 minutes for the best results.
6. Don’t Overcrowd
Lay skewers in a single layer with space between each one. If needed, cook in batches to avoid steaming.
7. Turn Halfway
Flip skewers halfway through cooking to ensure they brown evenly on all sides. Total cook time is usually 12 to 15 minutes.
8. Check Doneness
Chicken should be golden, slightly charred at the edges, and reach an internal temp of 75°C (167°F). Use a meat thermometer if unsure.
9. Add Veggies
Thread on peppers, red onion, courgette, or cherry tomatoes between chicken pieces for a colourful, complete skewer.
10. Serve with Sides
Pair with couscous, rice, salad, or warm flatbreads. Don’t forget a dipping sauce like tzatziki, hummus, or spicy mayo.
