Air fryer chicken croquettes

This is a great recipe to use up left over from a Sunday roast!! Air fryer chicken croquettes are one of my all-time favourite comfort food, I love their crispy exterior and creamy, flavourful filling. Traditionally deep-fried, these scrummy bites have now been reimagined with a healthier twist. So thanks to the wonderful air fryer, using less oil, making them a lighter yet still satisfyingly crispy treat. I love mine with chicken, but you can use all kinds of different fillings, from cheese, chorizo, ham and bacon! A modern take on a beloved favourite that you can enjoy guilt-free

Cooking time 15 minutes

Essential Kit

You will need an air fryer, baking paper, bowls and whisk.

Ingredients

2 Eggs
100g Cooked and shredded chicken
400g Mashed potato
1 tsp Onion powder
50g Plain flour
50g Breadcrumbs (Finely blitzed)
1 teaspoon dried parsley
Low calorie cooking spry

Method

Mix your mash potatoes, onion powder, parsley and season well with salt and pepper in a large bowl. Grind the breadcrumbs in a blender or smoothie maker, to make them smaller, almost like grains of sand.

Prepare the breading area by arranging three bowls on your surface. Then in the first bowl, put your plain flour, in the second bowl, place beaten eggs, and in the third bowl, your breadcrumbs. Line them up in the order of flour fist, then eggs, and finally the breadcrumb mix. So using a spoon, take a portion of the potato mix in your hand and flatten it in your palm. Then create a small, thin disk, about 6-7 cm.

So place some of your shredded chicken in the centre of the disk and carefully fold the edges of the mashed potato disk over the chicken to seal and cover it completely, gently shape it into the ball and roll it between your hands until it is smooth and even, trying to make sure there are no openings or cracks. Start with dipping the ball into the flour mix, making sure you have an even coverage. Follow, with your egg and finally into your fine breadcrumbs. Continue with the rest of the mix, making sure each ball is thoroughly covered. Place into your air fryer and spay with your cooking spray. Set your air fryer to 185c and cook for 12/15 mins or until golden brown.

So depending on the size of your balls, you may need to adjust the time. But if you find that balls are not browning, just spray with a little more oil.

Serve your air fryer chicken croquettes as a starter with a dipping sauce or as a main dish with salad or fries.
